Playing with blueberries and yogurt we whipped up a bunch of popsicles with our Zoku Quick Pop Maker. We decided to put blueberries in them to look like bubbles or polka dots. Just having fun and playing with food until fish came up and we decided to put Swedish Fish inside the popsicles. While these popsicles are healthy (I know there is a sugary gummy fish, but really it is 1 fish and optional) , fun, and quick there were a lot of giggles and memories in making them. Great for a quick breakfast on a hot day (we like the yogurt swirl with blueberries inside for breakfast), snack, or dessert!

Blueberry Yogurt/ Blueberry Yogurt Swirled Pops

Makes 6 Zoku Pop Popsicles

12 ounces vanilla greek yogurt (used So Delicious Greek Style Coconut Milk Yogurt)

1/2c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)

1/4c blueberries (used frozen blueberries)*

1/2c blueberries to add in, optional (used fresh blueberries)

6 swedish fish, optional

Double Blueberry Protein Pops

Makes 6 Zoku Pop Popsicles

2c milk (used So Delicious Unsweetened Vanilla Almond Milk Plus)

1-2 scoops vanilla protein powder (used Vega One French Vanilla if making for the kids I use Vega Protein Smoothie Viva Vanilla)

1/2c blueberries (used frozen blueberries)

1/2c blueberries to add in (used fresh blueberries)

*To make all blue pops, not swirled, use 1/2c blueberries.  Swirled pops: Blend together 6 ounces of yogurt and 1/4 cup of milk and place in a cup or container, can be mixed by hand.

In a Vitamix or blender blend together remaining 6 ounces of yogurt, 1/4 cup of milk, and 1/4 cup of blueberries. If adding fish and place fish into popsicle mold on the side. For the Zoku Quick Pop Maker you will have to warm up or get the fish wet and hold into place along the inside a few seconds. Swirl or alternate vanilla yogurt mixture and blueberry yogurt mixture into popsicle molds, adding additional whole blueberries if adding them to the popsicles. Place popsicles into freezer and freeze, for the Zoku Pop Maker it will take about 6-7 minutes. Remove and enjoy!

As a Vega Recipe Ambassador I receive Vega products, which I used as an option in this recipe. I use Vega not because it is given to me but because it has been my plant-based protein of choice since before I started blogging and some recipes are made with Vega products I purchase. I only write about foods I love, my blog is an extension of my hobby to make fun healthy food creations for me and my family.
