Looking for something fun and healthy to spice up your normal breakfast? Try Breakfast Quesadillas! I try to keep things different but we do get into ruts sometimes making the same things for breakfast when things are crazy. We have made PB&J quesadillas for lunch before so I decided to change them up a little, add some fresh fruit and veggies and make some for breakfast with some new Kolat Superfood Fushion Nut Butters we got! I first heard about these Nut Butters from Heather of Better With Veggies when she made my Peanut Butter Puffins Bars using Cinnamon Blueberry Walnut Superfood Fushion Almond Butter. With a house full of blueberry lovers I had to check out this nut butter and I was amazed at the other flavors when I found the website! Not to mention each inherently nutritious, blend of whole food ingredients, starts off with protein packed, heart healthy almonds, one of natures most nutritious superfoods. KOLAT is packed with antioxidants, essential minerals, healthy fats, phytonutrients and provides 50% of the recommended daily value of VITAMINS per serving. They are all natural, no sugar added, dairy free, gluten free, vegan, and non GMO. Being a nut butter addict, with two nut butter loving girls, I had to get my hands on them! Tracking them down was a little harder than I had hoped as they aren’t approved yet in the midwest but they are working hard on it. In the meantime they do have a website where they can be ordered. We made one with Kolat Dark Chocolate Coconut and bananas and the other with Kolat Cherry Vanilla Almond, apple slices, and shredded carrots. Both on Ezekiel sprouted whole grain tortillas they are packed full of goodness. We serve ours with So Delicious Vanilla Greek Style Coconut Milk Yogurt on the side. These quesadillas are quick to make before school and give kids a great start to the day! These aren’t just for breakfast and they aren’t just for kids either!
What would be your favorite Breakfast Quesadilla combo?
1 sprouted tortilla (used Food For Life Ezekiel Sprouted Taco Size Tortillas)
2 TBSP nut butter of choice (used Kolat Superfood Fushion Cherry Vanilla Almond and Kolat Superfood Fushion Dark Chocolate Coconut)
fruits and veggies of choice (used 1/2 banana sliced for one and 1/3 apple sliced and handful of shredded carrots for the other)
additional fillings such as nuts, seeds, raisins or other dried fruits, coconut, chocolate chips
coconut oil spray or melted coconut oil
Heat griddle on medium. Spread nut butter on tortilla and place fillings on one half of the tortilla on top of the nut butter. Fold the other side over and spray the outside with coconut oil spray or lightly brush with coconut oil. Place coconut oil side down on the griddle and spray or brush the side facing up. Heat for a couple of minutes until outside is golden brown and flip cooking the other side. Remove from heat after 2nd side is cooked until golden brown and cut into wedges. Serve with yogurt, avocado, or whatever you desire. Enjoy!
