As you know, if you follow my blog, I like to make smoothies for my kids and I will also make a version for myself. This smoothie is called bright eyes as it is sure to open your eyes in the morning with the fresh orange and ginger. Plus everyone knows carrots are good for your eyes, have you ever seen a rabbit wearing glasses?
Bright Eyes Smoothie
Makes 1 serving, or 2 smaller kid size servings
1 c non dairy milk of choice (used So Delicious Almond Milk Plus for the protein but we also love it with cashew milk)
1 orange, peeled*
1 handful of baby carrots, or 1/2-1 c of chopped carrots*
a chunk of ginger, peeled (this will be personal taste and I tend to use less for the kids, well one of them the other likes it)
ice, optional
*If you aren’t using a Vitamix or high-powered blender you can also use orange juice/ carrot juice or grate or cook your carrots so they blend better.
Place everything except for ice in a Vitamix or high-speed blender and blend until smooth. Add ice and blend until smooth. Enjoy!
Bright Eyes Protein Shake
Makes 1 serving
1 c non dairy milk of choice (used So Delicious Almond Milk Plus for the protein but we also love it with cashew milk)

1 scoop of plain or vanilla protein powder (used Vega One Natural)
ice, optional

Place everything except for ice and protein powder in a Vitamix or high-speed blender and blend until smooth. Add ice and protein powder and blend until smooth. Enjoy!
