Yep more beets and berries! The combo is just so lovely, well unless you beet it so much and accidentally spill it well than someone might think you cut yourself again playing with sharp kitchen tools again. Haha! Having a big bowl of mixed berries and wanting to use them I was looking for something different. After having berries, berries and yogurt, berry smoothies, it was time for a berry smoothie bowl for breakfast! Not just any berry smoothie bowl but a beautiful beet berry smoothie bowl! I honestly am not sure what I like better the bright vibrant color of berries or beets, I guess if I had to decide I would say berries only because of how many things I have stained with beets. Now to this beautiful beet and berry smoothie bowl there is no right or wrong way to make it, ok maybe there is but I tried a couple different versions and really I couldn’t go wrong. You can make it as thick, like ice cream, or thin, like a traditional smoothie as you want. Add in more or less beets or berries depending on taste or color you want, yep sometimes I want a certain color please tell me I’m not the only one. Then there is the bananas, if you want you can add in even more for a thicker, sweeter, fluffier smoothie bowl! Want greens, add the green layer, or protein you can add that too. Oh then come toppings… yep toppings it is like going for froyo (any other froyo lovers out there??) you can have as pure and simple or as crazy as you want it! Seriously you really Can’t Beet A Berry Smoothie Bowl!

When would you enjoy your beet berry smoothie bowl? What is your perfectly customized combo?

Can’t Beet a Berry Smoothie Bowl (want to enjoy it as a smoothie add more milk)
Makes 1-2 servings
1 1/2-2 large frozen bananas, or more if desired (if making 2 servings I will use 4 bananas)
1 beet, raw or cooked, chopped (used raw)
1c fresh berries (used strawberries, blueberries, and raspberries)
1c non dairy milk of choice, or juice/tea of choice (used So Delicious Almond Milk Plus for green layered, Bai5 Brasilia Blueberry for the other bowl)
handful of baby spinach, optional
1-2 scoops protein powder, optional (used Vega Protein and Greens Vanilla, Vega One Natural)
extra berries, seeds, nuts, or toppings of choice, optional (used extra berries, hemp hearts/seeds on one and Linwood Milled Flax, Sunflower, Pumpkin & Sesame Seeds & Goji Berries)

Make layered with a green smoothie bottom, as shown. Blend together a handful of baby spinach, protein powder, 1/2 a frozen banana, and 1/2 a cup of non dairy milk/juice. Pour into the bottom of 1-2 cups or bowls and place in the freezer while making the next layer. In a Vitamix, or high-speed blender, blend together remaining bananas, beet, berries, and remaining 1/2 cup of milk/juice until smooth. Pour over green smoothie layer and top with desired toppings. Enjoy!

To make without green smoothie bottom. In a Vitamix, or high-speed blender, blend together beet and berries, adding a little milk/ juice if needed. Blend in optional protein if adding. Add in bananas and blend until thick and smooth, or to desired consistency, and adding milk/juice as needed. Pour into a bowl or glass and top with desired toppings! Enjoy!

While I do receive some Vega products from time to time, which I listed as an option in this recipe, I do purchase much of it on my own. It has been my plant-based protein of choice since before I started blogging. Even though most Vega products used are purchased by myself I do add this disclaimer. I do not make any money off any Vega sales or posts. I only write about foods I love, my blog is an extension of my hobby to make fun healthy food creations for me and my family.
