The girls wanted to have a little fun, which they called Wacky Wednesday, making another Monster Green Smoothie. This time they picked apples, carrots, and mango. We had some leftover shredded carrots that we added for a little fun. Of course I had to make one, a protein version, for myself too! I just left off the crazy hair.
Carrot Apple Monster Smoothies
Makes 2 servings
1 c carrots
2 c almond milk, or non dairy milk of choice (used So Delicious Almond Milk Plus)
2 apples, peeled, cored, and sliced
1 mango frozen, or 1 cup frozen mango chunks
couple big handfuls of organic baby spinach
1/2 c shredded carrots, optional
In a Vitamix puree 1 cup of carrots with just enough water to make a puree. You can also used cooked carrots if you have some leftover in the refrigerator. Pour into the bottom of 3 glasses, this does make more than the 2 servings so if you are only making 2 save leftover for something else. I couldn’t reduce the amount as it wasn’t enough to puree smoothly. Blend milk, apples, mango, and spinach in a Vitamix or high-speed blender until smooth. Pour on top of carrot puree in two of the glasses. Add optional shredded carrots on top. Enjoy!

1 scoop plain or vanilla protein powder (used Vega One Natural)
