Carrot Cake Smoothie

 

We seem to be all about carrots right now, maybe because Easter is coming up I am not sure. My youngest wants to make everything with carrots and I am not complaining. Carrots are popping up in our cookies, cakes, smoothies, shakes, sandwiches, salads, snacks and any and every meal of the day. We add carrots to green smoothies, make apple carrot juice, and many other smoothies, this one is inspired by carrot cake and we like our cake inspired smoothies/shakes!

 

Carrot Cake Smoothie

Makes 1 serving

1 c non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)

2-3 carrots chopped, or about 1 c shredded if your blender isn’t powerful enough to handle chunks

1/8 fresh pineapple section or about 2/3 c frozen pineapple

1 scoop vanilla protein powder (used Vega Viva Vanilla Protein Smoothie)*

dash of cinnamon, nutmeg, and or a little fresh ginger (I add a little of each to taste depending on mood)

1 date or 1 TBSP raisins, optional

1/2-1 TBSP chia seeds, optional

1 c ice

 

*If not adding protein powder and making as a whole food smoothie I add 1 tablespoon of chia seeds. I also use Vega Performance Protein Vanilla or Vega One French Vanilla depending on my needs when I make it.

 

In a Vitamix, or high-speed blender blend everything except chia and ice, until smooth. Add in ice, chia if you want it chopped up, and blend until smooth. I like to add the chia in last but if you are adding and don’t want it whole you can add it in with everything else. Enjoy!
