We have so many carrots we harvested from the garden I had to throw some into a smoothie. I was going to go for a carrot cake smoothie but didn’t want something overly sweet or cake like, shocking I know, in the morning. Yes this is coming for the girl who wears a shirt and likes to say “Eat Cake For Breakfast”.
Chai Carrot Smoothie
Makes 1 serving
3/4c grated carrots, packed
1c non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)
1 scoop chai protein powder (used Vega One Vanilla Chai)*
1/2 small frozen banana
1 TBSP raw chopped walnuts, optional
ice, optional (didn’t add this time)
*You can also use vanilla protein powder (Vega One Vanilla or Performance Protein) and add a little cinnamon and nutmeg.
Place everything into a Vitamix or high-speed blender and blend until smooth. Sprinkle with cinnamon and enjoy!
If you want you can add more carrot and top with cashew cream or vegan cream cheese mixed with a little milk and vanilla to make it more like carrot cake.
