I know you are probably wondering what these are based on the name but I was having a creativity block. The kitchen I don’t have this problem but then when I have to write them up I go blank. These burritos are homemade dairy free nutritional yeast “cheese” and bean burritos on sprouted tortillas with an avocado salsa sauce. The flavor of these will mostly be determined by the salsa you decide to use and how spicy it is.
Cheeseless Cheesy Bean Burrito
Makes 6 servings, 2 tortillas each
Cheese Sauce
1/2c nutritional yeast*
1/4c flour, all-purpose wheat flour or gluten-free all-purpose (used Gluten Free Cup 4 Cup)
2 TBSP corn starch
1 tsp sea salt
1/2 tsp granulated garlic
2c water
2- 15 oz cans pinto or black beans (used Organic Pinto Beans), rinsed and drained
12 taco size sprouted tortillas, Ezekiel 4:9
2 avocados
1c salsa verde
1/3c fresh chopped cilantro
salsa and other toppings of choice
Combine nutritional yeast, flour, corn starch, garlic and salt in a sauce pan, whisk in water. Heat on medium until just boiling and simmer to thicken. Remove from heat and stir in beans.
In a small food processor puree 2 fresh avocados and salsa verde. Alternatively you can mash avocados with a fork and stir in salsa.
Heat a griddle or pan on medium. Slightly warm tortilla so it will bend without breaking, spoon in mixture and fold/ roll. Place seam side down on hot griddle or pan until golden and crispy, flip. Plate burritos, top with avocado salsa sauce, optional salsa and toppings, sprinkle with fresh cilantro and enjoy!
