Chia Chocolate Bottom Raspberry Yogurt Bowl

 

Looking for an alternative for a yogurt parfait and wanting to add some superfoods to your diet? This Chia Chocolate Bottom Raspberry Yogurt Bowl is a healthy and delicious option. The bottom is a chia pudding made with raw cacao or chocolate protein powder. Top that with raspberries and raspberries with vanilla greek style coconut milk yogurt and sprinkle with cacao nibs or chocolate shavings. Great for breakfast, snack, or dessert this bowl is packed with superfoods, protein, omegas, fiber, antioxidants, and more!

Another favorite I decided to enter this in the So Delicious Dairy Free 3 Course Recipe Contest.

 

Chia Chocolate Bottom Raspberry Yogurt Bowl

Makes 1 serving

1 TBSP chia seeds

1/3 c So Delicious Unsweetened Almond Milk Plus

1 TBSP raw cacao* (used Navitas Naturals Raw Cacao)

pinch of sweetener of choice, optional (I like dark chocolate and won’t add any for myself but add a pinch of Stevia In The Raw for the girls)

1 6oz container of So Delicious Greek Style Vanilla Coconut Milk Yogurt

1 c fresh or frozen raspberries

1 tsp sweet cacao nibs (used Navitas Naturals Raw Cacao)

 

*I also like to use chocolate protein powder (I use Vega One, Vega Performance Protein, and Vega Protein Smoothie), adding desired amount and more milk as needed to reach desired consistency. When using chocolate protein powder I also omit sweetener.

 

In a bowl combine chia seeds, almond milk, and cacao, let sit for 10-15 minutes to thicken. Add optional sweetener if desired. Top with 1/4- 1/2 a cup of the raspberries, or you can also mix them all into the yogurt or place on top of the yogurt. Add remaining raspberries to yogurt and gently mix to keep a thick fluffy texture with raspberry pieces. Spoon yogurt mixture on top and sprinkle with optional cacao nibs. Enjoy!

 

Some may wonder why I don’t just use So Delicious Greek Style Raspberry Coconut Milk Yogurt. I almost always have Vanilla on hand, there have been a few times I have run out, because it is so versatile and leaves my options open. It also means I can change it up and use any fruit I may be craving in this recipe. I can switch it up and use bananas, strawberries, oranges, or any other fruit I desire in place of the raspberries!
