On a quest for a rich chocolate pudding that is good for me I came up with this Chocolate Chia Protein Pudding that is great for dessert or breakfast. Yes I said breakfast, that is when I usually eat this. I would normally just add my Vega One Chocolate or Vega Energizing Smoothie Choc-a-lot, which I think has a much richer chocolate flavor, but this time I wanted to stick to the Vega One and see what I could come up with.
Chocolate Chia Protein Pudding
Makes 1 serving
2TBSP chia seeds
1tsp vanilla
1 1/4c coconut or almond milk (for breakfast I use So Delicious Plus Unsweetened Almond Milk for dessert I use So Delicious Unsweetened Vanilla Coconut Milk)
1 scoop chocolate protein powder (used Vega One Chocolate)
1TBSP cacao powder (used Navitas Nauturals Cacao Powder)
1tsp lucuma powder (used Navitas Nauturals Lucuma Powder)
1tsp mesquite powder (used Navitas Nauturals Mesquite Powder)
Vega Maca Chocolate Bar shavings (optional)
Alternatively you can make it with Vega Energizing Smoothie Choc-a-lot and omit cacao, lucuma, and mesquite.
In a bowl mix 1/2 cup of milk, vanilla, and chia seeds, place in the refrigerator overnight or for 30 minutes. If I don’t put it in the night before I usually mix it before my workout. After chia has thickened, in a Vitamix or high-speed blender blend chia mixture, remaining milk, protein powder, cacao, lucuma, and mesquite until smooth. Pour into a bow and top with optional shavings of Maca Chocolate Bar. Enjoy!

This looks delicious but it didn’t work for me?? It never thickened overnight. I used 1/2 cup almond milk with vanilla and 2 tbs chia and gave it a stir in a bowl. This morning, I pulled it out of the fridge and it hadn’t thickened? Any ideas? I’m trying to perfect this and I want to achieve that smooth vitamix consistency that you have (I do have a vitamix). Thanks!

Thank you. I have never had chia seeds not thicken. If you only used 1/2 cup of almond milk and 2 TBSP of chia you should have had a very think mixture. I am not sure what went wrong.
