Chocolate Chip Chia Pancakes

These Chocolate Chip Chia Pancakes are hearty thick pancakes that will keep you fueled and energized for hours. If you are looking for a lighter pancake option see option 2 below. I like topping them with a mixture of almond butter and pure maple syrup or almond butter and raw agave. Another one of my weaknesses right now is a mixture of almond butter and raw agave mixed into plain yogurt so I also topped these pancakes with that for a yummy delicious treat!

 

Chocolate Chip Chia Pancakes

makes 20 pancakes, 4 servings

2 TBSP ground flax seeds

1/4c water

1 large, ripe banana

1 1/4c almond milk

1 tsp vanilla

1/8 tsp ground cinnamon

1c oats

2 TBSP chia seeds

1/2c buckwheat flour

2 tsp baking powder

1/2 tsp sea salt

3 TBSP chocolate chips or carob chips

 

In a bowl mix flax and water and set aside. Heat griddle or pan on medium- high. In a Vitamix or high-speed blender blend banana, almond milk, vanilla, cinnamon, oats, and chia seeds. Add flax and water mix, buckwheat flour, baking powder, and salt to the blender and blend just until combine. Being careful not to over blend the mixture! Stir in chocolate chips/cocao nibs or I like to sprinkle them on top so they get crispy and have a slight burnt flavor. Spray griddle with non stick spray, I like coconut oil spray. Turn griddle or pan down to medium and spoon pancakes mixture on to the griddle and sprinkle with chocolate chips, if not mixed in. When pancakes look set on the edges, approximately 1-2 minutes, flip pancakes and cook another 1-2 minutes. Top pancakes with syrup, almond butter, or toppings of choice. Enjoy!

For a fluffier/ lighter option:

Serves 1 to 2

2 eggs, or egg substitute

1 large banana

1/4 tsp cinnamon

1 tsp vanilla

1 TBSP flax seed

1 TBSP chia seeds

1 tsp baking powder

1-2 TBSP chocolate or carob chips

 

Heat a skillet or griddle on the stove on medium. Place eggs, banana, vanilla, baking powder, and cinnamon in a Vitamix, high-speed blender or magic bullet and blend until smooth. Add in flax and chia seeds blend until combine. Alternatively you can mash the bananas with a fork, scramble eggs with a fork, and mix everything together by hand with a fork or whisk. Stir in chocolate chips, or you can sprinkle them on top as you make the pancakes. Lightly spray with nonstick spray (I like coconut oil, or coconut oil spray). Pour into hot griddle in desired size. Sprinkle with chocolate chips if you didn’t stir them into the batter. Flip them when they have puffed slightly and start to set on edges. Top with almond butter, yogurt, syrup, or whatever you wish. Enjoy!
