Just like a kid at the pool screaming “Cannon Ball!” before a big splash these little balls are sure to add a splash of fun to your breakfast, snack, or dessert before summer ends! These delicious little Chocolate Chip Cookie Bites are delicious on top of a smoothie, with a splash of milk for “cereal” yes I said you can enjoy these for breakfast, or make them into cookies and dunk them into plain or our Simple Sweet Strawberry Milk for snack or dessert! Of course you can just pop them in your mouth and enjoy them. Healthy so you won’t feel guilty about enjoying them or giving them to your kids for breakfast. There is also a protein option to pack an extra punch, which I like to make for myself or for the girls as a healthy snack after their gymnastics, soccer, or other activities.

Chocolate Chip Cookie Bites

Makes about 18 cookies, 52-54 cookie bites (4-6 bowls of “cereal”)

2 1/2c oats, not quick cooking (used Bob’s Red Mill Gluten Free)*

1 medium  banana, ripe (about 1/3 cup puree)

1/3c almond milk, or non dairy milk of choice (used So Delicious Almond Milk Plus for added protein)

2 TBSP coconut palm sugar

1 tsp pure vanilla

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/3c vanilla protein powder (used Vega Protein Smoothie Viva Vanilla for kids cookies, Vega Performance Protein Vanilla for my cookie bites )*

¼- 1/3 c chocolate chips, or sweet cacao nibs (used dark chocolate chips for some batches and Navitas Naturals Sweet Cacao Nibs for others)

 

*If not using protein powder for cookies add additional 2 TBSP flax seed or 2 TBSP extra oats. For regular cookies you can reduce oats to 2 cups for a less dense cookie.

 

Preheat oven to 350.  In Vitamix, food processor or blender, pulse together oats, cinnamon, baking soda, salt, and protein powder if using. You can process to a flour consistency for less texture or I like to go coarse flour texture leaving some chopped oat pieces. Add in chocolate chips or cacao nibs and pulse a couple of times to break the chocolate into small bites, if making into cookies you can omit this step and stir in chocolate/ cocoa when mixing. Pour into a medium bowl. In Vitamix, food processor or blender, blend together banana, milk, coconut palm sugar, and vanilla until smooth. Pour into dry mixture and stir until just combine. Roll or drop into small balls, large marble size, using a melon baller, teaspoon, spoon, or hands and place on a cookie sheet. Bake for 8 minutes. If making cookies drop or form into 18 cookies and bake for 8-10 minutes. Let cool a couple of minutes and remove from baking sheet and place on cooling rack. Enjoy!

 

 

Simple Vanilla-Nana Protein Smoothie topped with Chocolate Chip Cookie Bites

3/4-1c non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus for extra protein)

1 scoop protein powder  (used Vega One French Vanilla in photo, also use Vega Performance Protein Vanilla, or Vega Protein Smoothie Viva Vanilla– use for the kids, based on my nutritional needs when making it)

1 large frozen banana cut into chunks, or can use ice

 

Blend everything together in a Vitamix, or high-speed blender, until smooth. Pour into glass or bowl and top with Chocolate Chip Cookie Bites! Enjoy!

Chocolate Chip Cookie Bites and milk (or “cereal”)

1c or desired amount of Chocolate Chip Cookie Bites

1c non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)

 

Place Chocolate Chip Cookie Bites in a bowl and top with a splash, or more, of milk. Enjoy!

Cookies n Milk, Simple Sweet Strawberry Milk

1c non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)

1c fresh strawberries, can use frozen but thaw or it will end up being a smoothie

Sweetener of choice to taste if desired

3-4 Chocolate Chip Cookies, recipe above

 

Blend together milk and strawberries in a Vitamix, or high-speed blender, until smooth. Test for sweetness and adjust as desired. Pour through strainer, optional, and into a glass. Serve with cookies. Enjoy!
