Saturday morning pancakes. Growing up my mom use to make pancakes on Saturday mornings. Betty Crocker Orange Cookbook and the book would just open to that page it was used so often (and the chocolate chip cookie recipe too), page 57, I have it memorized. I have that same orange cookbook, except mine is my great grandmother’s old copy which has been passed to me. On page 57 you will also find some of my grandma’s writing up on the top. I love pancakes! I have made so many different kinds, buttermilk, greek yogurt, gluten free, the list goes on. So many different variations, Birthday Pancakes for my girls on more than one occasion. Sometimes with sprinkles, or even red velvet which is my oldest daughter’s favorite. I am loving the 2 ingredient pancakes, two eggs and one banana that now have been playing and experimenting off that. Made these Chocolate Chip Pancakes for my girls last weekend and they loved them! Chocolate Chip Pancakes
This makes 12 3-4” pancakes, which works great for the kids on weekdays, I double it for the family
1 ripe banana (approx. ½ c mashed)
2 eggs (or flax eggs 1 TBSP ground flax seed, 3 TBSP water per egg let sit 5 mins to thicken)
2 TBSP Whole Wheat Flour or Gluten Free (I like Cup 4 Cup) Flour or Peanut Butter Powder for extra protein
2-3 TBSP mini chocolate chips or carob chips
1 tsp vanilla
Dash of cinnamon
1/8 baking powder
Syrup for drizzling over top or try Peanut Butter & Co Dark Chocolate Dreams spread on top like my girls requested!
I find this recipe works best in a blender or Magic Bullet but alternatively you can mash the banana (until free of lumps) and mix all the ingredients except chocolate chips together.
Heat a skillet or griddle on the stove on medium. Lightly spray with nonstick spray (I like coconut oil, or coconut oil spray).
Pour into hot griddle in desired size. Sprinkle with a few mini chocolate chips or carob chips.
Flip them when they have puffed, are bubbling, and set on edges.
Drizzle with syrup or spread with Dark Chocolate Dreams and enjoy!!
