Chocolate, peanut butter, bananasโฆ.now that I have your attention guess what kind of granola we made? Yep Elvis Granola, or Chocolate, PB, Banana for those like me who aren’t bacon fans. My oldest and husband are bacon fans so I was going to throw in some bacon flavored pieces (just made some tasty vegan tempeh bacon) but my husband wasn’t home when we made it and my oldest said she would rather not so we made ours without. Granola is a staple in our house and it is so quick and easy to make. We make small batches (unless making for gifts as well) so it is always fresh and we make whatever kind we want. Check out some of our other granola recipes here. Great for breakfast, snacks, on the go, parfaits, there are so many ways to enjoy it. What is your favorite way to enjoy granola?
Chocolate, PB, Banana (Elvis) Granola
Makes about 5-6 cups
3 c oats, gluten-free
1/3- 1/2 c Peanut Butter & Co Dark Chocolate Dreams Peanut Butter, or chocolate nut butter of choice
1/4 c raw agave, or honey (honey for non-vegan)
2 TBSP coconut oil
1 tsp vanilla
pinch of sea salt
1/2 c dried banana chips
1/4-1/3 c sweet cacao nibs, chocolate chips, or chopped dark chocolate of choice (used dark vegan chocolate chips), optional
Bacon fan? Add a some bacon flavored pieces, optional
Preheat oven to 300 degrees. Line large baking sheet with parchment paper. In large mixing bowl mix together melted coconut oil, agave/honey, peanut butter, vanilla, and salt. Add oats and mix together with rubber spatula until evenly coated. Spread on prepared baking sheet. Bake 25-30 minutes, stirring every 10 minutes. Usually I cook it for 30 but every now and then it will start to smell like it is burning around 25 in which case you can remove it early unless you want a slightly burnt flavor, it has never actually burned in our oven. Remove from the oven and let cool before adding banana chips, cacao nibs and or chocolate, and optional bacon pieces. Store in airtight container, and enjoy within 5-7 days. Enjoy!

The Elvis protein oats are delicious go to! Did you make the Cookie Dough Granola yet? If not I guess you now have 2 on your list! The batches are smaller than the Gingerbread and others.
