Chocolate Maca Chocolate Chip Protein Ice Cream

 

To say I love ice cream would be an understandment. Those who know me know I will go through spurts of eating ice cream every night, even for breakfast from time to time. My only problem is I wish ice cream was healthier. Well this ice cream is good for you! So many people are now enjoying banana “ice cream”. I usually add Vega Energizing Smoothie Choc-a-lot but decided to do Vega One Chocolate. Not only does it add chocolate flavor but I get protein, fiber, omegas, antioxidants, probiotics, greens, and 50% of my daily vitamins and minerals while not adding any extra sugar or artificial colors or sweeteners. This “ice cream” is so delicious you could eat it for breakfast and not feel guilty! Still wanting to have fun and add in some chocolate, a little crunch, or texture still while keeping it healthy I made two batches one with a Vega Maca Chocolate Bar so I  call that one Chocolate Maca Chocolate Chip Protein Ice Cream and another with Vega Cocoa Kissed Savi Seeds which I call Chocolate Cocoa Savi Seed Protein Ice Cream. Both delicious and healthy!

 

Oh and since today is National Chocolate Ice Cream Day I am going to enjoy Chocolate Maca Chocolate Chip Protein Ice Cream for breakfast and have Chocolate Cocoa Savi Seed Protein Ice Cream for dessert!

 

Chocolate Protein Banana “Ice Creams”

Makes 4 servings

3-4 frozen bananas (I used 3 really large ones, use 4 if you are using medium)

1- 1 1/3c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)

2 scoops chocolate protein powder (used Vega One Chocolate)

Stevia or sweetener of choice to taste (optional, I did not add any sweetener)

1/2c Vega Cocoa Kissed Savi Seeds (optional)

1/2- 1 Vega Maca Chocolate Bar (optional)

 

In a Vitamix or food processor combine 1 cup coconut milk and protein powder. This will prevent powder from sticking to the inside of the Vitamix if you were to add bananas and try to blend it all at the same time. Once combine add in bananas and blend until thick, smooth, and creamy adding in more milk 1 TBSP at a time if needed. Stir in optional add-ins, Maca Chocolate or Chocolate Savi Seeds for our two batches, and enjoy as soft serve or place in the freezer for a few hours to harden and serve scooped. Another option if you are a fan of the grab the pint and sit with a spoon you can put it in 3-4 cups or containers and freeze it until desired hardness and eat it that way. Sprinkle additional toppings on if desired. Enjoy!

My kids also enjoy it with Vega Choc-a-lot Smoothie mixed in!
