Happy Monday! I’m ready to start this week off with lots of veggies to balance out all the chocolate and goodies I ate yesterday. Starting off with my favorite green juice and healthy breakfast and this Citrus Avocado Asparagus Salad for lunch! No guilt here in enjoying pizza for our family foodie date Friday, wine, fresh homemade pasta and sourdough while my dad was staying with us this weekend, and the chocolate and sweets yesterday for Easter. I’m all about finding that happy, healthy, balance and enjoying life. Which I’ll talk about more below and would like your thoughts on and know what you want to see more of! I just find that with the sweets and heavy foods I crave fresh fruits and veggies. So while spending time with the in-laws last night there was chocolate cake that I really wanted I was craving beets so yes I sat there and ate all the extra beets from a salad I’ll be sharing with you soon. My hubby did get a slice of that chocolate cake to share with me last night with some wine while I tried to catch up on some work.
Now this salad, it will have you craving all the veggies especially if you like asparagus like I do. If you’re a regular reader you know I like my salads, especially ones that are packed with flavor, texture, and nutrition. Sometimes ones that are a little less traditional and aren’t a big bowl of greens, like this one. Don’t get me wrong there is a lot of green, just not leafy greens. I don’t think I need to go into all the nutrition in this bowl as we probably all know that whole foods like all the veggies and fruits that are packed in this bowl are healthy and good for you. Asparagus, strawberries, oranges, avocado, a little red onion, optional micro greens, and balsamic or coconut vinegar. Simple and delicious this combo packs in flavor, texture, and nutrition. No need for heavy dressings as there’s enough flavor and the avocado and vinegar come together giving you the creaminess and balance it out. My kind of salad, and an extra dose of greens as I like to pair my salads with green juice (love my Juice So Good Fierce Greens as it’s not a green juice packed with fruit and sugar, stay tuned I have a giveaway coming this week on Instagram) or kombucha if I’m drinking something other then water. If you’re looking for your kids to eat more veggies or salad try this one! It’s packed with so much flavor and with the strawberries and oranges they might surprise you and eat the whole thing!
Back to that happy, healthy, balanced life. Life has been a little crazy for the last month and a half as I’ve talked about getting sick, travel, injury, my grandma passing, and recently the family getting sick. I’ve been trying to focus on the positive and with that and things being crazy there have been a couple times I haven’t posted on a day I normally would. Like last Friday. With A being sick the week before and again last week and everything we took Friday to go so something fun as a family since A was feeling better and since I fell asleep with her Thursday I didn’t post Friday. Things get crazier in the spring and summer as the girls both play competitive club soccer and have a lot of practices, games, and tournaments. A also has gymnastics. Many of our meals during the week are quick and healthy and sometimes on the go. We also like our smoothies and tend to enjoy those more in the spring and summer, although our love for them and smoothie bowls goes year round. With all of this I need to focus my time and instead of just picking things I (we) are loving to share I wanted to ask you what you want to see more of. I’ve been trying to post more daily eats on Instagram Stories as those have been requested. I can post more on Instagram I just cut back to posting once a day as it’s hard to keep up with comments sometimes. Since I only post here 3 times a week I want to make sure I’m delivering the content you want to see, of course based on what fits our life and what we eat. Citrus Avocado Asparagus Salad
Makes 2 servings
1lb thin stalked asparagus, ends removed and chopped into 2″ segments
1c strawberries, halved
1 avocado, cubed
1 orange, segments removed and cut in half
1/4 small red onion thinly sliced
handful of micro greens, optional (Weed’s Greens Organic Spicy Micro Greens, including radish, mustard, arugula, cress)
3 TBSP balsamic or coconut vinegar (Nuco Coconut Vinegar)
Bring a large pot of water, with a little sea salt, to a boil. Fill a large bowl with ice and water. Drop chopped asparagus into boiling water for 1 minute. Remove/drain and place asparagus into ice bath for 5 minutes. Prepare the rest of the ingredients if needed. Drain asparagus and place into bowls with strawberries halves, red onion slices, and orange segments. Toss with balsamic or coconut vinegar. Top or gently toss with avocado. Garnish with micro greens if desired and season with sea salt and pepper to taste. Enjoy!
