Is it Monday? The days are kind of blending together over here as things have changed so much over the last few weeks. One thing that hasn’t changed is my love for overnight oats and coffee so why not put them together once again but with a twist. Cloud Coffee Mocha Overnight Oats, if only they made my worries and tension float away like the clouds.

If you’ve been on social media more these days, I’ve actually been on it less most days, you’ll know that cloud coffee is taking social media by storm and is the newest coffee craze. Starbucks introduced cloud drinks over a year ago, their version is made with milk and egg white “clouds”. The new cloud coffee is light and airy coffee flavor foam made with instant coffee, sugar, and water.

Haven’t had it yet, it’s dreamy and a must if you’re a coffee lover! Just make sure you put it on top of milk and not cold brew or iced shots of espresso, it’s a little much. Haha. Also perfect for topping desserts, or overnight oats, if you ask me. Any overnight oat fans out there? Not sure, here are some recipes to get you started or to get you hooked, haha!

The overnight oat based is basic, yet everything but! All you need is oats, non dairy milk, and cacao/cocoa. Or you can go with just oats and a chocolate non dairy milk if you have that on hand. So 3 ingredients for the oats, and 3 ingredients for the cloud if you count the water.

I like to make my ingredients count, especially right now as much as possible, to help boost nutrition and help respond to increased stress. Yes I know I probably should cut down on all the breads, pastas, and carbs. I swear my family could live off flour and water if we had to. But that is another story.

Cacao powder is one of the most powerful superfoods that’s packed with antioxidants, vitamins, and minerals. Great for brain and cardiovascular health, they don’t call it good mood food for nothing. It also helps reduce stress and balance energy.

Usually Cacao, Navitas Organics Cacao, would be my go to but right now I’m loving their Cacao+ Longevity that is Cacao powder with added reishi! An adaptogen I already use and love. Known as the “mushroom of immortality,” reishi mushroom is an adaptogen, a “superfood” that supports longevity through balancing your body’s energy, stress response, and immunity. I mentioned above you can also make this using just 2 ingredients and using a chocolate milk. If I make it without cacao powder I use REBBL Reishi Chocolate. Another way to get in my reishi and cacao to help with stress. It’s delicious and it’s been a favorite for years. If you’re looking for added protein you could use REBBL Dark Chocolate Protein, another favorite, which also contains reishi, maca, and plant-based protein. Or Ripple plant-based protein milk and add in cacao or use their chocolate milk.

Trying hard to get back to basics and “normal” in some respects as my body craves it. I’ve been getting in some short workouts at home even when I’m not feeling motivated and we’ve been going on daily walks, which is just as much for mental as physical reasons. We’re still surviving on flour and water, kidding but lots of homemade sourdough and my husband made bagels and fresh pasta. As long as we have flour… which I hope we don’t run out of because he told me he would make cattail flour!?! We’ve gotten orders of fruits and veggies but still not able to get our usual amount and it doesn’t last long so we will just continue to do what we can.

Speaking of fruits and veggies we should be planting our garden next month and not sure how that will go. Too late to start some things by seed and when I tried to order it’s still 2 weeks out which would put us further behind. Local nurseries have already started things so I’m hoping that there will be curbside pick up or a way to get what we need and order the seeds we can to still get it planted. Worst case we’ll have peas, beans, carrots, beets, raspberries, and hopefully more than a few blueberries from our new shrubs.

Ingredients
Chocolate Overnight Oats
  • 1 c rolled oats, gluten free if desired
  • 1 1/4 c unsweetened vanilla or plain non dairy milk*
  • 1/4 c cacao powder (Navitas Organics Cacao or Cacao+ Longevity Blend Cacao with Reishi)
  • stevia or sweetener of choice as desired, this will also depend on milk used and personal preference
  • chopped chocolate for garnish, optional (Hu Simply Dark Chocolate)
Cloud Coffee Topping
  • 2 TBSP instant coffee
  • 2 TBSP sugar, or monkfruit
  • 2 TBSP boiling/hot water

Cloud Coffee Topping
  • 2 TBSP instant coffee

Instructions
  1. Mix oats, milk, and cacao together in a jar(s) with a tight lid.
  2. Place in the refrigerator overnight, or for at least 4 hours.
  3. In the morning stir and divide into 2 bowls/jars.
  4. In a small/ medium bowl or mug (if you have a 1 cup glass liquid measuring cup or container that size it's perfect) mix instant coffee, water, and sugar with a whisk (whisk attachment on a hand mixer works perfect, takes less than 2 minutes) or hand frother until thick and frothy. It will be the texture of soft to stiff peeks if you were beating egg whites. If you have a small container for your high-speed blender used for making whipped cream that will also work.
  5. Top oats with your cloud coffee and optional chocolate.
  6. Enjoy!
Recipe Notes

If substituting chocolate milk (I like to use REBBL Reishi Chocolate) omit cacao and use only 1 cup.
Monkfruit and sugar are the only two sweeteners I have tried.
The coffee cloud cannot be made the night before, it will deflate and turn to liquid.
