Coffee! Yep I might just be crazy for coffee, I just love the smell and flavor! These oats came after making a green coffee shake and trying to switch up my coffee proats I had on repeat. If you missed them on my Instagram it was just steel cut proats (steel cut oats and egg whites) with coconut oil and vanilla stirred in, sometimes raw stevia, and then topped with chopped espresso beans and chocolate (my fav Vega Maca Chocolate Bar). After I made my Barely Buzzed Oatmeal, which if you don’t want as much caffeine or are a huge coffee fan like I am, I would highly recommend. Pretty simple and the options are endless, just like the drink options at your favorite coffee shop. Make it simple with coffee or cold brew, or creamier with your favorite pre-made non dairy drink (or half non dairy milk and half coffee), add in or top with your favorite toppings! Need protein? Add your favorite chocolate or coffee flavored protein powder, or make my Mocha Your Morning Protein Oats for a real treat! The options are endless from simple like this to my favorite proats (as I stated above and posted on Instagram) and my other coffee creations posted on the blog. However, there are also great guides and reviews by The Full Moon Cafe on their website. Both for people with coffee making equipment and people without it. Maybe they should just call me the indecisive eater since I get stuck on an idea or dish and then want the same thing but when I want to switch things up I go for that same type of dish or flavor combo. Like a salad I have been hooked on for lunch daily I will “switch things up” using a different nut or fruit it in, adding, subtracting, or subbing one thing. Than I go to blog it if I haven’t and I want to photograph and share all my variations because I can’t just pick one. Maybe I overthink things, or maybe I just had too much coffee… wait is there such thing?
Crazy For Coffee Porridge
Makes 1 serving
3/4c strong brewed coffee, cold brew, or even prepared dairy-free coffee drink (like So Delicious Cococcinos or Calfia Farms Ice Coffee Almond Milk Drinks)
1/4c steal cut oats
1/2 tsp vanilla extract, omit if using a coffee drink
sweetener of choice to taste
Optional Topping and additions:
chopped coffee beans, cacao nibs, chocolate chips, cream (used chopped coffee beans, Navitas Naturals Cacao Nibs, and So Delicious Culinary Coconut Milk)
Want proats? Add in 1/2 scoop of your favorite chocolate or vanilla protein (I like to use Vega One or Vega Sport Protein) like my Mocha Your Morning Protein Oats, or add in cooked egg whites.
In a pot bring oats and coffee to a boil. Reduce heat and simmer for 5-7 minutes until liquid has been absorbed and oat have softened, regularly stirring. I like mine creamy with texture. Remove from heat and stir in vanilla and sweetener of choice. Topping with optional toppings of choice. Enjoy!
