Earth Day is April 22nd so I thought it was the perfect time to post my fun, fresh, and flavorful Cucumber Strawberry Bouquet Wrap! Fruit bouquets are one of my favorite things to make for parties, particularly spring parties and Easter Egg Hunts. They are so fresh and pretty. One day whipping up a salad, which than turned into a lettuce wrap, I got an idea to whip it into a pretty bouquet! With cucumber, strawberry, avocado, topped with a refreshing lime mint yogurt dressing this wrap not only packs a lot of flavors but nutrition as well. I like to make it with a coconut wrap as they hold together so well and keep this wrap together however you can use any wrap you wish. Some sprouted wraps just don’t hold together well so be careful. No worries though you can also make these as lettuce wraps or lettuce cups. No matter how you make it is delicious! For a quick lunch or dinner I make wraps or lettuce cups but for a tea party, get together, having a friend over, to surprise someone special for lunch, or for the girls the boutique wraps are fun!
I used one of my favorite So Delicious Yogurts to make the Lime Mint Sauce in this wrap and thought it was also the perfect way to share some of the reasons So Delicious is one of my favorites and something really exciting! Cucumber Strawberry Bouquet Wrap
Makes 1 serving
1 coconut wrap or sprouted wrap of choice, optional (used a Pure Wrap Coconut Wrap)
2-6 lettuce leaves, used petite romaine heart leaves
1/2-1 cucumber sliced thin, or spiralized
6 strawberries
1/4 ripe avocado
couple thin slices of red onion
Mint Lime Coconut Yogurt Sauce, recipe below
To make bouquet shown you will also need thin slice of celery to secure wrap and 4 wooden kabob sticks
Mint Lime Coconut Yogurt Sauce
Makes enough dressing for 4 wraps
1 TBSP lime juice
1 TBSP chopped fresh mint leaves
1c plain or vanilla coconut milk yogurt (used So Delicious Coconut Milk Yogurt)
Mix lime juice, mint, and yogurt together until combine. If time permits place in the refrigerator for an hour for the flavors to come together but not required, if making head use within a couple days.
If making lettuce wraps clean large lettuce leaves and slice strawberries. You can make 2-6 lettuce wraps depending on the size of your lettuce and how full you want them. Fill with avocado (mashed or sliced), cucumber, strawberries, onion slices, and yogurt sauce. Enjoy!
If wanting to make a flower wrap as shown slice 4 strawberries from tip down to stem stopping before cutting all the way through, horizontally and vertically (like X or +). Using a sharp knife you can slice each section in half as shown for petals. Place a wooden kabob stick in the steam of each strawberry. Remove steam and thinly slice remaining strawberries. To assemble wrap make a cone with your coconut wrap or wrap of choice and tie celery around to secure. Fill cone with avocado, lettuce, cucumber, sliced strawberries, red onion, and yogurt sauce. Cut sticks on strawberries to desired length and place into wrap. Enjoy!
