This salad it much more than just cucumbers and tomatoes but I didn’t want the name to get too long. I threw this salad together quick for dinner but it would also make a good lunch! I broke it down into a single serving but it can easily be converted to make it for as many people as you are serving.
Cucumber Tomato Salad
Makes 1 serving
1 cucumber, peeled, sliced, and quartered
4 Campari tomatoes, quartered, alternatively you can use approximately 2 cups of another type of tomato quartered
few slices of thinly sliced red onion
1/2 an avocado, sliced or cubed
sea salt and pepper
Optional Crunchy Topping
1TBSP unhulled sesame seeds
1TBSP raw shelled hemp seeds
dash of granulated garlic or seasoning of choice
To make the topping you can just combined all the ingredients in a small bowl or I had this on hand as I make a bigger batch and run it through the food process a couple of times to bread them up and combine everything. Assemble the salad by plating the cucumbers, tomato, and onion. Add avocado cubes to the salad, season with salt and pepper, and top with optional Crunchy Topping. Enjoy!
