Date Truffles

 

My mom makes date bars for Christmas and I decided to make a clean version of them as Date Truffles. I made a few batches, some with cashews, love dates and cashew butter as a snack, and some with almonds. I rolled all of them in pecans. So quick I made some with Medjool and Deglet Noor, both work and both are delicious. They are a perfect addition to any cookie/ dessert platter.

 

Date Truffles

Makes 12 truffles

6 dates, pitted and cut in half

1/2 c ground cashew or almond meal (ground nuts, measured after grinding)

1/2 c ground pecan or walnut meal (ground nuts, measured after grinding)

1 TBSP coconut oil

1 TBSP raw agave or maple syrup

1/2 c finely ground nuts of choice, raw cacoa, or finely shredded coconut for rolling (used pecans)

 

In a food processor process nuts (minus ones for rolling) until they are finely ground. Add coconut oil and agave/ maple syrup and pulse until combine. Divide mixture into 12 and roll into a ball. Roll each date half into a ball and push put into the center of each rolled nut ball. Or roll the mixture around the date ball. Roll in nuts or coconut and place on a sheet covered with parchment paper. Place balls in the refrigerator to set (about 10 minutes). Store in the refrigerator or freezer until ready to serve. If storing in the freezer pull out 10-20 minutes before serving. Enjoy!

 

Alternatively if you have drier dates you can soak them, make a date paste, and chill it and roll it into small balls.
