Good morning and happy Monday! Thank you for joining my co-host Deborah and me for another hopefully inspiring Meatless Monday! Today I have an easy and delicious Dirty Chai Muesli Bowl for you.

If you’re like me you just had a busy holiday weekend and this morning might be a little rough, rougher than your average Monday morning. The girls have been off the last 5 days and I’ve really enjoyed spending the extra time with them. After Thanksgiving we headed north to stay for the long weekend hosting a get together with friends for the annual tree lighting and fireworks. We spent hours playing in the snow, strolling through the small town, sipping our coffees and admiring the snow, lights, and beauty, horse drawn sleigh rides through the city, and watching the fireworks on Friday. It’s so magical watching the fireworks in the winder, especially if it snows. When it snows the fireworks reflect off the snow and it’s a magical wonder. The girls were still able to make snowmen and snow angels waiting for and watching the fireworks with friends. Lots of late nights and laughs all weekend and I’m so tired yet ready to get back to regular routine this morning.

One of my favorite quick and easy breakfasts is muesli. If you follow me on Instagram, or are a regular reader, you probably already know this. There are many ways to enjoy muesli, just like cereal with milk, soaked like overnight oats but you can soak for as little as 10 minutes, dry sprinkled as you would granola, or even in baked goods. I often get asked what the difference is between muesli and granola. While they are both very similar in that they both are often made of grains, nuts, seeds, and fruit muesli is not baked like granola, it’s less sweet, and there are no added oils. So you won’t find big chunks in it or clumps. Once I tried muesli years ago I it was love at first bite. I actually first remember trying it and falling in love with it in Ireland and since have a local favorite Seven Sundays (available nationwide at places like Target but also online). It’s gluten free and packed with healthy nuts and grains, delicious, and it fills me up!

If I was asked what my favorite way to enjoy muesli was it would hands down be soaked with yogurt and fruit and or toppings like nut butter! It’s a so easy and it’s saved me so many mornings to prep the night before or even throw together in the morning and take it with me. If you see me at my girls soccer games and tournaments on a weekend morning 99% chance I have a jar of soaked muesli and all the goods in my hand. A fall and winter flavor I really like it chai tea. I’ve overdone it in past years and gotten burnt out but that hasn’t happened in awhile. I’ve been putting the two together and this is one combo I’ve been meaning to share for awhile now but with all the holiday recipes it’s been pushed back. With being gone and things busy the last couple weeks and a Monday after a holiday weekend when I couldn’t wait to get home to make this for breakfast it was the perfect time to share it. Especially since it has coffee as I like dirty chai lattes (chai latte with a shot of espresso) and I’m going to need a little extra Monday motivation. Not a fan of coffee or just don’t want the added caffeine you can just make a Chai Muesli Bowl and omit the espresso, still just as delicious!

If I prep this Dirty Chai Muesli Bowl the night before I personally only soak the oats and quickly assemble the rest in the morning if I’m in a hurry. I do this because I decide when I wake up if I want it hot or cold. If I want it warm I heat it up quick, top it with my yogurt, nut butter, bananas or berries, shot of espresso and go! If I have more time and I get to make a nice relaxing bowl I like to add caramelized bananas!

As you can see from the spill, which I decided to leave as it was just a reflection of that morning, I needed all the espresso so I added Wild Friends Vanilla Espresso Almond Butter and Bare Snacks Coffee Bean Coconut Chips instead of going with caramelized bananas.

Dirty Chai Muesli Bowl
Makes 1 serving
1/2c muesli (Seven Sundays Cocoa & Coconut Muesli)
1/3c chai latte, chilled (prepared chai beverage or made with your favorite chai and dairy free milk, Gray Duck Chai and So Delicious Unsweetened Almond Milk)
1/4-1/3c yogurt (So Delicious Unsweetened Coconut Milk Yogurt)
1-2 shots fresh brewed espresso (Peace Coffee)

Optional Toppings:
1 TBSP almond butter (Wild Friends Espresso Almond Butter)
1-2 dried coconut chips (Bare Snacks Coffee Bean Coconut Chips)
fresh or cooked bananas, berries or apples

 

 

Soak muesli and chai latte, 10 minutes or overnight. If you want to enjoy this bowl warm heat soaked muesli before adding yogurt and toppings in the microwave. Top with yogurt, optional toppings, and a shot of espresso. Enjoy!
