Chilly mornings are upon us, those mornings you don’t want to get out of bed because you are so warm and comfortable. The mornings the first thing you want to do is grab a warm cup of coffee, not only for the caffeine but so you can hold that warm cup in your hands. Mornings like these my family especially wants something warm, well or smoothie/ yogurt bowls. This Easy As Apple Pie Cherry Muesli Bake makes a perfect breakfast. This summer I made a Blueberry Muesli Breakfast Cake. I even made it at the cabin and camping as it was quick and easy and had my family filled up and fueled. Muesli is something I have liked but really fell in love with last summer while in Ireland. Coming back and finding a local muesli Seven Sundays, that is now sold all over at Target and Whole Foods made me extremely happy. Soaked muesli, soaked or not soaked with yogurt, adding fruit to either of those, topping a smoothie bowl with it, baking with it I just can’t get enough. You may have even see on Instagram one of my favs right now is an apple hollowed out and filled with soaked muesli. As the air started getting cooler I couldn’t wait to make an apple muesli bake. So one Saturday morning that’s what I did. It did not disappoint, it hit the spot in so many ways. Compare it to an oatmeal bake but with a heartier texture, the baked apples had me thinking of stuffed baked apples. I had thought to make it with ginger muesli but last minute decided to make it with cherry. I had apple pie and cherry pie in my head, and I’m not much of a pie person but the flavor combo sounded perfect to me. Of course you can make it with any muesli you have or love and to get the cherry flavor combo add a few tablespoons of dried cherries. I call it a bake and it is a delicious filling breakfast that is perfect for whatever adventures are ahead for the day but really it can be cut up and you can enjoy the bars for snack, or you can add ice cream and enjoy it for dessert! The options are endless but whip it up one weekend morning and enjoy it with your coffee or tea and you will not be disappointed!
Easy As Apple Pie Cherry Muesli Bake
Makes 8-12 servings
2 1/4c muesli (used Seven Sundays Cherry Vanilla Muesli, gluten free)
2 apples, pick apples that are good for baking such as Mcintosh, Granny Smith, Honeycrisp but there are many options just don’t use Red Delicious
1 1/2c unsweetened apple sauce
1/2c non dairy milk (used So Delicious Unsweetened Vanilla Cashew Milk)
2 TBSP ground flaxseed, or you can use ground chia seed powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
2 baking apples
2 TBSP coconut palm sugar, optional
1 TBSP coconut oil
Preheat oven to 350F. In a large bowl combine muesli, flaxseed, baking soda, salt, cinnamon, and coconut palm sugar if using. Once mixed together add in apple sauce and milk and stir until combine, set aside. Setting it aside will allow time for it to soften up and soak up the liquid, if you baked it right away you would have more bite and a heartier oat texture. Peel and core the apples and chop or dice into small pieces. I quarter my apple, then cut each quarter into 4 slices an then cut 5-6 times the other way resulting in 20-24 chunks per quarter. Coat a seasoned 10 1/2β³ cast iron skillet, or cast iron dutch oven, with the coconut oil. You can also use a 8×8 pan, just watch it as it bakes and adjust accordingly. Spoon and spread mixture into prepared pan, sprinkle with cinnamon sugar (I use a mixture of cinnamon and coconut palm sugar) if desired. Bake about 45 minutes until it feels set but not too dry, still a little spongy. Remove and let cool 15-20 minutes. Or If you canβt wait carefully spoon out and top with yogurt, ice cream, drizzle of pure maple syrup, and or sprinkle of cinnamon. Once cooled you can cut into bars and enjoy plain as is or with yogurt, ice cream, maple syrup, honey, a sprinkle of cinnamon, or as desired. Enjoy!

I have thought about it but some of it seems like it doesn’t need it and the ones that too I am usually so involved and when I do try the pictures don’t turn out well, my camera gets all dirty (or dirtier), and they don’t turn out well. I did add some just here and there pics in one of my posts coming but not a complete step by step. Oh wait a how to food photos? No I haven’t because honestly I feel mine have a long ways to go. It was something I really wanted to work on this year and really haven’t put the time in I want. I also hate Photo Shop so I don’t really use it which is what most people want and I can’t even follow along. I moved from natural photos last winter to a lot of photo light box photos as we don’t have a lot of light here in the winter and it can be hit or miss. It was also really limiting times I could photograph which would mean if I made a great dinner it usually wouldn’t photograph well and I wouldn’t post it. I can post info and pictures maybe on the light box my husband made me. I feel your struggle.

If you try it let me know how it turns out. I have’t tried Simply 7 but Seven Sundays does make a few gluten free flavors and you can get them at Whole Foods or Target.

Thank you! I could eat muesli everyday! I actually probably did for a whole month eating it soaked with nut milk and fruit or yogurt and fruit, or whatever as there are so many delicious ways to enjoy it.
