What to do with all those pretty hard-boiled eggs from Easter… well like most people I had to make up some egg salad sandwiches. Try one of these two ways, Avocado Egg Salad or Protein Packed Egg Salad, both a healthy alternative to classic egg salad made with mayo.
Avocado Egg Salad
2 hard-boiled eggs
1/2 Haas avocado
Sea salt and fresh ground pepper to taste
Bread or Romaine Lettuce Leafs (I like Ezekiel 4:9 Sprouted Whole Grain Bread)
Peel eggs and chop. Chop avocado and combined chopped eggs and avocado, season with salt and pepper. Put salad in romaine leafs for lettuce wraps or make a sandwich with your favorite bread. Enjoy!
Protein Packed Egg Salad
2 hard-boiled eggs
3-4 TBSP plain 0% Greek Yogurt
1 TBSP mustard (used inglehoffer Original Stone Ground mustard)
Sea salt and fresh ground pepper to taste
Bread or Romaine Lettuce Leafs (I like Ezekiel 4:9 Sprouted Whole Grain Bread)
Peel eggs and remove yolks. Combined yolks, yogurt, and mustard in a bowl. Chop egg whites and add to yolk mixture. Add salt and pepper to taste. Put salad in romaine leafs for lettuce wraps or make a sandwich with your favorite bread. Enjoy!
