Happy Friday! So I was recently informed that it’s National Pizza Week, as in recently I mean yesterday morning. I really should have known this, especially since it’s the year of pizza for my family. By that I mean it’s our theme for our monthly family foodie dates this year. Yes we do a family foodie date, you can read about this years more in last week’s Spinach Artichoke Neapolitan Pizza post. If you are a regular reader you will know that we are all about pizza, unconventional pizza usually but pizza, especially homemade! This hasn’t always been the case but I’d say my youngest daughter and I were the last to get bitten by the pizza bug and that happened last year or the year before. All the pizza recipes posted last year are proof. So how did I not know this until yesterday when a pizza recipe of mine was posted?

Of course I had to fix that! I should have scheduled out family foodie pizza date this week but I think I’ll hold off since we’re still waiting on A’s and my shirts (yep cute donut ones from last year)! Instead since my girls have been requesting pizza bites and bagel bites because one had them at a friends house and one heard about them. So I whipped up my own little Fresh and Quick Pizza Bites (vegan, gluten free friendly) for them with only a few simple ingredients. They are even dairy free and vegan, and can easily be gluten free using a different bread. We used a sprouted bread and my husband’s homemade sourdough. Seriously someone stop him from making bread it’s been almost a month of fresh sourdough and while my tummy is surprisingly handling well I can’t remember the last time I’ve eaten this much bread and it’s a little scary.

The verdict… “these are the best ever mom!” I think that they were exaggerating a little but they were happy and smiling and that made me happy. Well until I made another pan to photograph and couldn’t even leave them for two seconds without them disappearing so I didn’t even get a plated picture. Really girls? To which they thought I could just make more. I was out of bread, I thought we had more sprouted bread in the freezer but with all the sourdough I haven’t checked in awhile. I’m sure we’ll have bread, fresh bread, again soon in the house. I’m sure we’ll be making them again really soon since they’re so quick and easy and the girls love them. Next time with salad since that’s what they wanted but we’re out of spinach and lettuce, go figure it was the day before grocery shopping day.

If you’re a regular reader of the blog I’m not one to whip something up and post it the next day. Well unless you go back a few years to me making a smoothie in the morning and thinking it’s so good I have to post it that same day. Those were also the crazy beginning days when I was told to build up my recipe box and I posted almost every day except a couple that year. CRAZY! These were just so quick and easy though, even tested 2 batches, 2 cheeses, 2 breads so I had to post for National Pizza Week!

Is football still on? Oh yes it is because I haven’t seen the half time Super Bowl show. These would even make an easy game day snack!

Makes 12 bites, 2 servings, easily double for more
3-4 slices of bread (used Silver Hills Big 16 Sprouted bread and got 4 per slice for most slices except ends, for our small homemade sourdough we get 3 per slice)
3-4 Campari tomatoes
2oz Miyoko’s Fresh VeganMozz, or 2-3oz mozzarella of choice
12 small fresh basil leaves, or you can used fresh torn basil pieces
pizza seasoning or granulated garlic coconut oil or extra virgin olive oil spray

 

Preheat oven to 425F. Using a 2″ biscuit, or round cookie cutter, cut circles out of bread. If you don’t have a cutter you can cut the crust from your bread and cut bread into 4 squares. Place cut bread pieces on a baking sheet. Spray bread lightly with coconut oil or extra virgin olive oil spray and sprinkle with pizza seasoning or granulated garlic. Slice tomatoes into slices, depending on the size of your tomatoes getting 3-4 nice slices. Place tomato slices on top of the bread. Top with crumbled or shredded cheese. Bake for 10-12 minutes until cheese is golden brown, Vegan Mozz will not get very brown. You can place under the broiler, watching carefully, for a couple minutes if desired. Top with fresh basil. Enjoy!
