Fresh Orange Spinach Salad

I am always looking for new salad combinations. I like spinach, strawberry, orange salads but didn’t want something overly sweet this time. This salad wasn’t overly sweet and the watermelon radishes added some color as well as crunch. Perfect for a lunch, light dinner, or as side for dinner.

 

Fresh Orange Spinach Salad

4 servings

8-10 cups organic baby spinach

1 large watermelon radish, thinly sliced

2 oranges, peeled and separated

1/4c organic unhulled sesame seeds

 

Orange Dressing

1 large orange

2 TBSP balsamic

1 clove garlic, minced

1/3c extra virgin olive oil

 

Start by making the dressing. Zest orange and put it in a high speed blender or VitaMix. After zesting the orange add  juice of the orange or you can use the whole peeled orange to the blender, as well as the balsamic (used regular balsamic, found my white balsamic after and will use that next time, either works) and garlic. Blend until well combined. Slowly stream in extra virgin olive oil while blender is running.

I like to toss my spinach with the dressing before plating, you will not need all of the dressing. Toss spinach and dressing and arrange spinach on plate. Garnish salad with radishes and orange segments, sprinkle with sesame seeds. Enjoy!
