Christmas Eve is just over a week away and I’m trying so hard not to get stressed this year and take it easy being pregnant yet last week I overdid it a little. So getting recipes I had made and tested photographed and or the posts written didn’t happen. So I’m sharing Gingerbread Donuts I posted a couple years ago with you again since I was hoping to make them yesterday. Not getting much sleep Saturday night I didn’t get up early as planned to make them before the Christmas program, A played Mary, and S’s choir concert. 

Since Thanksgiving my post schedule has been a little off with the romaine recall and I had a few delicious holiday salads to share but am deciding to hold back sharing for now. 

I may still share some quick recipes on Instagram this week but right now struggling to finish shopping, start wrapping, maybe make some cookies (I did bake a couple dozen sugar cookies but they’re disappearing before I even have time to decorate them), get the house in order (remodel still going strong and hoping to wrap it up by the new year), and things ready for company to come and to host Christmas next weekend. 

I hope you are all having a wonderful holiday season and remember to make time for what really matters, family. Try not to get stressed and enjoy the season.

Tis’ the holiday season and all the baking! The girls had off a day last week and we decided to bake and of course donuts were at the top of the list. If you’ve followed me on Instagram or social media you will know that at the beginning of the year the family and I decided we would do a monthly family donut date. Every month we would go to a new donut shop around our area/state and grab donuts, share, and just talk about life. Often would grab a dozen or more donuts testing them all sharing each donut and finding our favs. We would take all the scraps, pieces, and extras home and sometimes we would eat them. I was never a big donut fan but finally liked them a year or so ago when Mr. Whisk grabbed some on the way up north and than falling in love with a donut at a hotel in California in March. Seriously the best fresh raspberry filled donut of my life and we even tried to get some from the place that only supplies them to the hotel to enjoy with wine later that night after I had one for breakfast. Taking a non donut fan to a donut lover in one bite you know it had to be a good donut. As our monthly donut dates come to an end I’m trying to come up with an idea for next year. Thinking maybe a pizza date? Or ice cream? It isn’t about the food but being a foodie family it’s nice to cut out a special time to do something special every month and cherishing the moments and time together. As I am again reminded this past weekend how precious life and those moments are.

I’ve made mini donuts for years but I hadn’t had a standard muffin pan until this year and we’ve definitely gotten our monies worth out of it! So I whipped up some baked Gingerbread Donuts, of course with sprinkles because those are not optional in this house. Mr. Whisk came home from traveling from work this weekend and we finally got our Christmas tree and it was a perfect time to bake up some Gingerbread Donuts! I tried to make them as healthy as possible yet still not compromising on a delicious treat. You can even make them with probiotics if you want adding a little extra health benefit, we like Good Karma Plain Probiotics. You can add an extra flavor boost using So Delicious Holiday Nog to make the donuts and or icing. We’ve tried the probiotics, Holiday Nog, and plain unsweetened non dairy milk to make the donuts and icing and they are all delicious and disappear! These are gluten free and vegan and trust me family approved as the girls had donuts every day this past week while Mr. Whisk was traveling and they loved it, as did friends and family that stopped by.

Only taking a couple minutes to make and less than 10 minutes to bake they were even made during the week to get us through. Really thought just enjoying a warm baked Gingerbread Donut while looking out the window with a sparkling twinkling Christmas tree watching the snow fall while sipping a hot cocoa or coffee is just so relaxing and these are the moments we need right now, relaxing moments with family cherishing all the precious moments. Baking with the girls, enjoying our coffee/cocoa and donuts while listening to S sing and A dancing around like a “Sugar Plum Fairy”, these are the moments that melt my heart and make my holiday season.

Life is short and yes we sometimes enjoy donuts, trying to make them healthy but not compromising taste, even on a Monday!

Gingerbread Donuts
  • 1 c all purpose flour, or 1:1 gluten free baking flour (Bob's Red Mill 1:1 Gluten Free Baking Flour)*
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp cloves
  • 1/3 c coconut palm sugar
  • 1/3 c non dairy milk like So Delicious Unsweetened Vanilla Coconut Milk or Good Karma Plain Probiotics
  • 1/4 c unsweetened apple sauce
  • 1 TBSP black strap molasses
  • 1 TBSP coconut oil, melted
Icing
  • 1 c powdered sugar
  • 1-2 TBSP non dairy milk So Delicious Nog Coconut Beverage, or Good Karma Plain Probiotics
  • 1 tsp vanilla, can omit if using Nog
  • Sprinkles, optional (not really optional)

Instructions
  1. Preheat oven to 425F.
  2. In a large bowl combine flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl combine sugar, non dairy milk/probiotics, apple sauce, molasses, and coconut oil. If the cold liquids are too cold and the coconut oil gets hard heat a few seconds.
  4. Mix the wet ingredients into the dry and mix until just combine.
  5. Spray donut pan with non stick spray, I use coconut oil.
  6. For "perfect" looking donuts put mixture into a frosting bag or plastic bag and snip the end. Pipe the mixture into your prepared donut pan.
  7. Bake for 7 -10 minutes until golden brown.
  8. After removing donuts from the oven let cool slightly before putting on a wire rack cool.
  9. While donuts are cooling mix together powdered sugar, non dairy milk/probiotics, and vanilla until smooth. If you want thicker icing than let the donuts cool a bit longer.
  10. Dip donuts in icing and add sprinkles if desired.
  11. Enjoy!
Recipe Notes

* If you use a regular all purpose flour/cake flour donuts will rise and be puffier than ones shown with gluten free flour.
