The holidays are over, maybe you are just getting back to workout out. I am here to tell you that you can have your “cookies” and eat them too!! These Gingerbread Protein Balls are a great fitness snack, a delicious treat, which means you can have your treats while not feeling guilty!
Gingerbread Protein Balls
Makes 12
1 c raw almond meal
1 scoop vanilla protein powder (used Vega Protein Smoothie Vanilla, Vega One French Vanilla and Vega Sport Protein Vanilla will also work)
1 tsp cinnamon
1/8 tsp cloves
1 TBSP chia seeds
1 tsp finely grated fresh ginger root
1 TBSP agave or pure maple syrup, or honey for non vegan
1 TBSP molasses
1 TBSP almond milk
Pulse dry ingredients together in a food processor. Add wet ingredients and process until dough comes together. Roll mixture into 12 balls, or desired size. Store in the refrigerator or freezer and pull out as needed. If eating right away they will be soft, I would place in the freezer for 10-15 minutes before eating. Enjoy!!

I don’t have any protein powder, can I use a substitute of like coconut flour or something? If so, what do you recommend and what would equal one scoop?

You can use almond meal, oat flour, or coconut flour. I would start with 1/4 of a cup but you will probably need around 1/3 of a cup. Hope that helps let me know what you use to make them and how they turn out. You may also want to add 1 teaspoon of vanilla.

Thanks so much. I used 1/4 cup coconut flour, 1 tsp. vanilla and cashew milk (all I had). They turned out delicious!
