The holiday season is filled with cookies and treats but you can get your fix without all the sugar and with an added nutritional bonus with a Gingersnap Protein Shake. Or for a real treat you can make it into a delicious thick and creamy pudding, topped with a little Coco Whip coconut whipped cream. Packed with pumpkin, chia seeds, and protein and sweetened with a date you can stay on track this holiday season and have your “cookies” without unraveling your hard work. Next time the cravings hit for those holiday goodies whip it up into pudding by adding a frozen banana to treat yourself.

Gingersnap Protein Shake & Pudding*
Makes 1-2 servings
1c almond or coconut milk, or non dairy milk of choice (used So Delicious Almond Milk Plus for the shake, So Delicious Unsweetened Vanilla Coconut Milk for the pudding)
1tsp chia seeds
1/2c pumpkin puree
1 scoop vanilla or vanilla chai protein powder (used Vega Vanilla Chia Vega One and Vega Vanilla Performance Protein)
2 tsp blackstrap molasses
1 Medjool date, pitted
1 tsp cinnamon
1/2 tsp fresh ginger
1/4 tsp nutmeg

 

*Increase chia seeds to 1 tablespoon and blend in a frozen banana for thick, rich, delicious pudding! Top with So Delicious Coco Whip, or whipped topping, and optional crushed cookies or I like a drizzle of molasses.

 

Soak chia seeds in almond milk overnight or for at least 20 minutes. In a Vitamix, or high-speed blender, blend together almond milk with chia seeds and remaining ingredients until smooth. Enjoy!
