My husband loves burgers and I was looking for something different that the girls might like and came up with this Grilled Bruschetta Burger. I served them with grilled corn on the cob brushed with a mixture of extra virgin olive oil, fresh grated garlic, parmesan cheese, and fresh ground pepper.
Grilled Bruschetta Burgers
Makes 4 servings
1 loaf french bread
2lbs grass fed hamburger, 85-95% lean
4-6oz fresh mozzarella cheese, sliced
1-2 cloves garlic
2-3TBSP extra virgin olive oil
1c chopped tomatoes (used grape tomatoes)
1/4-1/3c chopped onion (used red onion)
1/4-1/3c shredded fresh basil, not packed
sea salt and fresh ground pepper to taste
Prepare topping by mixing tomatoes, onions, basil, salt, and pepper. Place mixture in the refrigerator until burgers are done. Slice french bread into 8- 1/2″ slices, or desired thickness. In a small bowl grate garlic and mix in olive oil. Make burger patties and season with salt and pepper. Heat grill medium high. Grill bread, brushing the side facing up with garlic olive oil mixture. When bread is toasted flip and toast oiled side. Grill burgers to desired doneness. Place mozzarella slices on burgers to melt. To assemble burgers place burger on an oiled side of one of the slices of french bread, top with tomato mixture, and top with second slice of french bread oil side down. Enjoy!
