Grilled Hawaiian Pizza Kabobs, no meat

This is the result asking my family what they want for dinner and getting pizza, kabobs, and salad for answers and I wanted to enjoy the nice weather and grill! My oldest keeps telling me she would be a vegan but still wants to eat bacon and the hubby is a meat eater so these Grilled Hawaiian Pizza Kabobs made everyone happy! Plus everything is better when it is on a stick!

 

Grilled Hawaiian Pizza Kabobs

Makes 4 servings, 2 kabobs each

4 large firm tomatoes

1 large red onion

1-2 green bell peppers

1/3  fresh pineapple

12 slices Canadian bacon, or meatless Canadian bacon (optional)

 

Serving suggestions:

2 heads of artisan romaine lettuce, chopped

grilled pizza crust*

 

Start by preparing all the veggies. Slice the tomatoes into 8 wedges. Slice the onion in half horizontally and then each half into 8 wedges. Cut the green peppers in half vertically, steam to bottom, and clean out seeds. Slice each pepper into 8 wedges and slice the wedges in half. Slice pineapple into wedges and then into approximately 1/2″ chunks. Slice Canadian bacon slices in half or wedges if you don’t want to fold over pineapple. Sprinkle kabobs with italian seasoning or salt and pepper if desired. Preheat grill and assemble kabobs.  Place kabobs on the grill and grill approximately 3-4 minutes, flip and grill another 3-4 minutes. Move kabobs to top rack and grill pizza crust.

*For the pizza crust I used this recipe my husband uses made with Cup 4 Cup Gluten Free Flour, surface dusted with granulated garlic when rolled out.  Grilled on medium-high, for approximately 2-3 minutes per side.

Plate kabobs on top of or next to chopped romaine, top lettuce with desired dressing if you wish, and serve with wedges of grilled pizza crust. Enjoy!
