Looking for a fun new way to spicy up a PB&J? How about making a PB&J Quesadilla!? The girls love these quesadilla and the possibilities are endless! We have even made these camping! We would wrap them in foil and put them on the campfire. We also like to freshen it up and use fresh fruit in place of jelly. They are great grilled or cold. You can add whatever you want and they are great for breakfast, lunch, snacks, or even dessert! Yes dessert!
Fresh PB&J Quesadilla
Tortilla (we use French Meadow Bakery Organic Sprouted Grain Tortilla or Food For Life Ezekiel 4:9 Whole Grain Tortillas)
Peanut Butter (used Peanut Butter & Co Smooth Operator for Banana Quesadilla and Dark Chocolate Dreams for the Strawberry)
Fruit of choice, sliced (used fresh strawberries, bananas), or jelly
Spread peanut butter on tortilla and place fruit slices on half of the tortilla and fold in half. If heating place in a large skillet, on the grill, or on a griddle heated on medium heat. If cooking on the campfire wrap in tin foil and place in an indirect heat area. Cook for a couple of minutes until golden brown and flip, cook another couple of minutes. Place on a cutting board and slice into wedges with a pizza cutter. Enjoy!
