The weather is nice and we have been grilling and eating outside soaking up all the sun! If you haven’t had grilled pineapple stop reading right now and go fire up your grill, you don’t know what you are missing!! Grilled pineapple is one of those things I crave when grilling season comes and I’m always looking for new ways to enjoy it, breakfast, lunch, dinner, or dessert. Usually I will grill some up to pair with yogurt or ice cream for a simple dessert! I grilled some up one afternoon and couldn’t wait until dessert to enjoy it so I had to whip up a salad with it. Blackberries are in season and so ripe and juicy I paired them. Balancing out the sweet you can add red onion and or jalopenos. Drizzle with a little lime juice and you don’t even need dressing. Craving a little saltiness add bacon. I added some to my husbands as I’m not having soy right now so couldn’t enjoy the “bacon” I had in the fridge that I wanted to add to it but I got my grilled pineapple and still enjoyed my salad!!

Grilled Pineapple Blackberry Salad
Makes 4 servings
4 mini romaine heart or smaller romaine heart, chopped
1/2-1 pineapple
6 oz fresh blackberries
2 limes, sliced in half to squeeze for “dressing”
2 TBSP cinnamon sugar (used a mixture of cinnamon and coconut palm sugar)
2 slices jalapeños, optional
few slices thinly sliced red onion, optional
4-8 slices of cooked bacon (regular or vegan), optional
sea salt and fresh ground pepper, to taste

 

Pre heat grill to medium. Slice the top and bottom off the pineapple and remove the rind. Slice pineapple into slices or wedges, remove the core if desired I usually leave it on. Sprinkle pineapple with cinnamon sugar and place on the grill. Turn every couple minutes, after grill marks are present and it releases from the grill. Once all sides are “grilled” turn heat down and continue cooking on low until tender. My slices took about 15 minutes, it will depend on how you cut your pineapple and how thick the slices/wedges are. Remove from the grill and let cook until they can be handles. Slice the slices or wedges into chunks. Assemble salads plating lettuce and topping with grilled pineapple, blackberries, onion and or jalapeños, drizzle with fresh lime juice, and top with optional bacon. Enjoy!
