Grilled Pumpkin Puree and Justin’s Maple Almond Butter Sandwich

 

It’s that time of year, there is pumpkin everything. Pumpkin lattes, pumpkin soup, pumpkin pie… I went to make my daughter a sandwich and thought what about a Pumpkin PB&J, yes pumpkin and peanut butter! I thought it would be much better warm and gooey on this chilly fall day so I even grilled it! It was so good I had to make myself one with almond butter. I decided to add a couple mini chocolate chips to her for fun. I served hers with an orange jack-o-lantern I have been making the girls for years that are healthy and cute and they really like them.

I can also see making these with Peanut Butter & Co Cinnamon Raisin Peanut Butter for breakfast or with the Dark Chocolate Dreams or White Chocolate Dreams with chocolate chips or other add-ins for a dessert!

 

Grilled Pumpkin Nut Butter Sandwiches

Makes 1 serving

2 slices of bread (we used our favorite Food For Life Ezekiel 4:9 Sprouted Bread)

1-2 TBSP of your favorite peanut butter or nut butter (used Peanut Butter & Co White Chocolate Dreams for hers and Justin’s Maple Almond Butter for mine)

2 TBSP of pumpkin butter or pumpkin puree (used pumpkin butter for hers and I had some left over pumpkin so I blended that with a little pumpkin pie spice)

couple of mini chocolate chips, optional

coconut oil spray

 

Heat a griddle or pan to medium. Spray the outside of your bread with coconut oil and lay the sprayed side down. Spread your nut butter on one slice, pumpkin on the other, sprinkle a couple of chocolate chips if you are using them. Put the sandwich together and griddle until outsides are nice and golden just like a grilled cheese, flipping to cook both sides. Alternatively you can make the sandwich and spray before putting it on the hot griddle. Remove and enjoy your warm gooey melty pumpkin nut butter sandwich!
