Took sandwiches to the grill, and we all had them our way! The girls had grilled cheese. I had a grilled vegan cream cheese with tomatoes, onion and kale. The hubby had a grilled BLT. My youngest wanted to have cauliflower when we were at the grocery store so she picked out a nice big one and we decided to grill it. This quick, simple meal was great because everyone got what they wanted and there was little to no clean up! What kind of sandwich would you grill?
Bread (we all had Food For Life Ezekiel 4:9 Sprouted Whole Grain Bread)
Toppings of choice
For the sandwiches I assmebled them ahead of time and then placed them on the grill, no butter or oil, and grilled a couple of minutes on each side until there were nice grill marks and the insides were warmed.
1 big head of cauliflower
1/4c nutritional yeast or seasoning of choice
Heat the grill to medium. Wash and cut cauliflower into chunks but not too small as they will fall through the slots on the grill. Place cauliflower on plate or baking sheet and spray with coconut oil spray and sprinkle with nutritional yeast or seasoning of choice. Place cauliflower on the grill, reduce heat to medium low, and cook for approx 5 minutes. Flip and cook an additional 5 minutes or until tender continuing to flip until all sides are grilled. Enjoy!
