Fruit is one of my favorite things of summer. There is always lots of fresh fruit in season and it’s simple delicious! Weather it’s snacking on fresh fruit, adding it to salads or dishes, or even grilling it there really doesn’t get much sweeter, literally! This sundae combines two summer staples, pineapple and cherries. If you haven’t had grilled pineapple you are missing out. Really if you like pineapple run to the store pick one up and grill it! While I’m not a meat eater I could go to one of those Brazilian all you can eat meat places for nothing but the grilled pineapple. While grilled pineapples topped with ice cream to make sundaes isn’t new usually when we make them they are topped with caramel sauce. I went a completely different route one night and topped them with cherry sauce, a homemade Balsamic Cherry Sauce. Ok stop with the faces you might be making really balsamic vinegar, while I only used a tiny bit, it really gives it just enough to compliment the sweet pineapple and tart cherries, even though the cherries aren’t that tart as they are cooked with some sugar to make the sauce. I really wish I had a great way of describing just how flavorful and delicious this grilled sundae is. Pair that with So Delicious Very Vanilla Cashew Milk Ice Cream and it is just a simple yet sophisticated sundae that will make your taste buds dance and your family and friends faces smile! If you want to play even more, or are really not wanting to try the balsamic (even though I know you’ll probably love it) you can omit the balsamic and pair it with So Delicious Snickerdoodle Cashew Milk Ice Cream! Fresh, flavorful, and full of color this dessert tastes as good as it looks and does not disappoint!

Grilled Pineapple Balsamic Cherry Sundaes
Makes 6-8 servings
1 large ripe pineapple
2 pints vanilla ice cream (So Delicious Very Vanilla Cashew Milk Ice Cream)
1/2c sugar
3c frozen cherries (used Triple Cherry Blend, tart and sweet cherries, from Costco)
1 TBSP balsamic vinegar (Nuco Balsamic Style Coconut Vinegar)
2 TBSP cinnamon sugar (coconut palm sugar and cinnamon)

 

In a sauce pan over medium heat sugar and 1/2 cup of water until sugar is dissolved, stirring occasionally. Add in cherries and cook over medium heat for 10 minutes stirring occasionally. Remove from heat and stir in balsamic vinegar. Let cool 5-10 minutes before transferring to a glass jar. Place glass jar of Balsamic Cherry Sauce in the refrigerator to cool at least 30 minutes but can be made a couple days ahead. Heat grill. Slice the top and bottom off of the pineapple and remove outer skin with a sharp knife. Using a pineapple corer remove core if desired, I leave it in. Slice pineapple into about 1/2″ thick round slices, getting 6- 8 slices out of a large pineapple. Sprinkle one side of the pineapple slice with cinnamon sugar and place cinnamon sugar side down on a grill over medium heat. Heat for about 5 minutes, until you have nice grill marks and pineapple starts to get tender. Sprinkle the side facing up with cinnamon sugar and flip, cooking the other side for another 5 minutes. Remove and let cool slightly before topping with a scoop of ice cream and Balsamic Cherry Sauce. Enjoy!
