Layered Peach Dessert (raw)

 

Looking for a clean, simple, peach pie dessert that can be made for one or can be served individual style for entertaining? This is might be what you are looking for. These layered peaches can be served cold and non baked or baked.

 

Layered Peach Dessert

Makes 1 serving

1 ripe peach

1/4c raw cashews

1tsp coconut palm sugar or sucanat (used Navitas Naturals Coconut Palm Sugar)

1TBSP gluten-free oats

2TBSP canned coconut milk, cold so it is light a thin cream, optional (I shake/mix my can of coconut milk and pour it into a glass bowl and use it for multiple things.) sweetened with sweetener of choice and a little vanilla

 

If you want to bake your peache(s) pre-heat oven to 350. In a mini food processor pulse cashews, coconut palm, and oats until well chopped and it is a course texture. Slice peach horizontally into sections. I cut mine into 5 sections, starting at the bottom and once I get to the pit I will continue to slice but keep the peach in tact and take the top slices off and pop the pit out of the middle slice/slices. Place bottom layer of peach in a shallow bowl, oven safe if baking,  and layer cashew oat mixture between peach slices. If you are not baking your peach you are done at this step and can drizzle with optional coconut milk. If you are baking your peach bake peach for 22-25 minutes. Remove from oven and let cool a couple of minutes and drizzle with coconut milk. Enjoy!
