Craving something refreshing I was going to make my Lemon Chiffon Protein Shake but decided to add a little fun and add some raspberries! Lemon and berries are a great combination with the tart and sweet. I wasn’t planning on posting it but thought why not and I did so to make a point, recipes are just guidelines. I have said it before and I will continue to say it, my recipes are meant to inspire others. While some recipes do require following likes cakes, breads, ect but the flavorings, additions, and recipes are customizable. Sometimes ingredients can be swapped out, other times it is as simple as adding your own twist to the recipe. Sometimes I will add some of our favorite variations to a recipe, sometimes there are just too many, and sometimes I post something new that we have many ideas but have not yet tried them. Sometimes the variations make it in new posts and sometimes I post them on Instagram. Trying not post too many pictures on Instagram or post the same things over and over I don’t post everything. I love seeing when people make my creations or make their own inspired by mine, so if you do make something I would love to see it!
Lemon Berry Shake
Makes 1 serving
1c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1 large lemon
1 scoop vanilla protein* (used Vega Viva Vanilla Protein Smoothie and Vega One French Vanilla)
stevia to taste, optional
1/2c frozen raspberries, thawed
*For non protein version, or you can add both if desired to make it thick and creamy, use 6oz vanilla yogurt of choice.
Zest lemon and remove peel, you will blend the zest and the lemon minus the white bitter peel. Or if desired you can use peel and juice from the lemon. In a Vitamix, or high-speed blender, blend lemon zest, lemon/lemon juice, protein and or yogurt, and ice until smooth. Add stevia to taste as desired. Pour into a glass and top with thawed raspberries. Enjoy!
