Lemon Pound Cake Breakfast Bowl

 

Seeing the sun shining and feeling the warm sun, which I haven’t felt in months, had me wanting something with lemon. I was already in the mood for some overnight oats or a breakfast bowl so I threw this breakfast bowl together. With the creamy layers of yogurt it had me dreaming of lemon pound cake. This can be made ahead or you can throw it together quick while getting ready in the morning as it will thicken up in 30 minutes. In a hurry you can put the yogurt on top and skip the layers. This bowl had me smiling and full for hours! While this is a breakfast bowl it could also be enjoyed as a snack, as I did the next day.

 

Lemon Pound Cake Breakfast Bowl (Overnight)

Makes 1 serving

1/3c oats, used gluten-free

1 TBSP organic chia seeds

1- 1 1/4c almond milk, coconut milk, or non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus, for the extra protein)

2 lemons*

1 scoop vanilla protein powder, optional (used Vega Viva Vanilla Protein Smoothie)

1 c unsweetened vanilla coconut milk yogurt, if using a sweetened version
(I would use the regular sweetened vanilla next time) omit sweeteners or test before adding (used So Delicious Vanilla Coconut Milk Greek Yogurt)

1 tsp coconut palm sugar, stevia, or sweetener of choice to taste

 

*You will only use the zest of the lemon in this recipe, the remaining lemon can be used to flavor water or as desired.

 

In a jar or bowl mix together oats, chia seeds, zest from 1 lemon, and 1 cup of milk. Place jar in the refrigerator overnight or you can eat in about 30 minutes, however it will thicken the longer it is able to sit. In the morning, or when you are ready to eat it, add zest from remaining lemon (saving about 1/3 of the lemon for garnish if desired) to yogurt and sweetened to taste. If you want less of a lemon flavor you can omit it from the yogurt and add just coconut palm, which will dissolve into the yogurt about 5 minutes giving it a caramel flavor (more flavor the more you use) or use a sweetened vanilla yogurt of choice. Remove oat mixture from the refrigerator and add protein powder along with a little milk as needed to achieve desired consistency, I use about a tablespoon but I like it thick. Layer lemon protein oats and yogurt mixture in a bowl or jar and top with lemon zest if desired. Enjoy!
