The girls love of avocado smoothies continues and this is another one of their favorites! S loves her Bai and Malawi Mango is her favorites. She loves mangos in general and will eat one daily if we have them in the house. When we got them on sale a month or so ago for $0.31 each I got a bunch of them and some days she had two a day and enjoyed every last one leaving nothing left for me to freeze. Luckily I have a bag of frozen organic mangos I picked up from Costco in the freezer for when a craving hits and we don’t have fresh ones. We also have a large bag of dried mangos she uses for snacks and likes to add to salads. It was only a matter of time before she added mangos to avocado smoothies since that is their go to right now. While it is delicious as just a green smoothie it is always fun to add a little extra color and an extra flavor twist! Weather we make it with strawberries or raspberries it is a pretty sweet combo and pretty too if layered! If we are in a hurry and taking it on the go sometimes we just blend everything together. Sometimes we add in a handful of greens, usually Earthbound Organic Power Greens or spinach, for an extra nutritional boost. If the girls are enjoying this smoothie after soccer or gymnastics they like to add Vega Tropical Tango Protein Smoothie or Tropical Greens and Protein. If you are looking for a thick creamy smoothie try an avocado smoothie! Also great for those that aren’t a fan of banana smoothies which is often used to make thick creamy smoothies, try replacing the bananas with avocado. You don’t taste the avocado and it doesn’t overpower the smoothie like bananas often can.
Are you an avocado smoothie lover? Do you have a favorite combo?
Mango Berry Avocado Smoothie
Makes 1-2 servings
1-2c Mango Bai or coconut water can be used, divided
1c frozen mango chunks
1/2-1c fresh or frozen strawberries, or raspberries (we used strawberries in the one pictured)
Handful of greens
Protein powder (we like Vega Tropical Mango Protein and Greens or Protein Smoothie)
In a Vitamix, or high-speed blender, blend together 1 to 1 1/2 cups of bai, mango, avocado and any optional ingredients you want to add until smooth. Pour into one to two glasses. You can rinse the blender out or if most is gone you can just add berries and enough of the remaining bai to reach desired consistency. This will depend on if you are using fresh or frozen berries and how thick you want it. We usually use about 1/2 a cup if using frozen berries and we want it think. Pour over green layer. Enjoy!
