Nutty Carrot Protein Shake

 

If you frequent my blog you will know that I love nut butter, I add it to almost everything including salads. After a workout one day I was craving one of my carrot nut butter salads but knew my stomach wouldn’t handle it well. I thought about just having some carrots and peanut butter but I decided to whip up a Nutty Carrot Shake. For about a week I tried so many different variations with different nut butters. Tastes great with peanut butter like Peanut Butter & Co Smooth Operator one of my favs, almond butter tastes amazing with Justin’s Vanilla Almond Butter, and even nut/seed butters like Nuttzo. Have an empty peanut butter jar, I happened to have a few one day and instead of using all of them to make overnight oats I added some almond milk to a Peanut Butter & Co White Chocolate Wonder jar, gave it a shake and put it in the refrigerator and later made a shake and enjoyed it in the container.

 

 

Nutty Carrot Protein Shake

Makes 1 serving

1 c non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus)

2-3 carrots cut into chunks, or about 1 cup of shredded carrots if your blender cannot handle chunks

1 TBSP peanut butter, or nut butter of choice

1 scoop vanilla protein powder (used Vega Performance Protein Vanilla)

1 date, optional

1 c ice

 

In a Vitamix, or high-speed blender, blend everything except ice together until smooth. Add ice and blend smooth. Enjoy!
