Oatmeal to a Different Beet

 

I will often make a batch over overnight oats or chia pudding if I am looking for a quick breakfast the next morning. Sometimes just oats, or just chia, sometimes a mix, whatever strikes me at the time. In the morning I add whatever I am in the mood for. So I had some ready and I was craving a beet smoothie, crazy I know, but I had the oats to eat so I decided to puree some beets and stir them in. Topped with some apples and chopped raw pistachios and it was good!

 

Oatmeal to a Different Beet

Makes 1 serving

1/3 c oatmeal, gluten free

1-2 TBSP chia seeds

1 c almond milk, or non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus)

2 medium cooked beets pureed, about 1/2 cup

1/2 an apple, chopped

1 TBSP chopped raw pistachios

dash of cinnamon

sweetener of choice to taste, optional

 

Mix oats, chia, and milk together and refrigerate overnight or for a couple of hours. In the morning stir in pureed beets, cinnamon, and optional sweetener of choice. Top with chopped apples and psitachios. Enjoy!
