Have leftover cranberry sauce? If not no sweat run to the store and grab some cranberries, and some extras to freeze for later, and whip up some cranberry sauce using the link below (it’s quick and easy) to a recipe I posted a couple of weeks ago or use your favorite recipe. This breakfast is quick, healthy, and is a great use of seasonal flavors! I used dairy free egg nog, which also tastes great in coffee, for more flavor but you can also use your favorite milk.
Overnight Egg Nog Oats and Chia with Cranberries
Makes 1 serving
1/3 oats, used gluten-free
1 TBSP organic chia seeds
3/4 c egg nog (used So Delicious Egg Nog Coconut Milk)
1/4-1/3c cranberry sauce, your favorite recipe or recipe in link
1-2 TBSP sliced almonds
dash of cinnamon
The night before mix together oats, chia seeds, and egg nog or non dairy milk of choice. In the morning you can heat it up if you wish or I like mine cold. Top with cranberry sauce, almonds, and a dash of cinnamon. Enjoy!
