It has been awhile since we have had papaya as they aren’t too common here. While grocery shopping I decided to pick one up, not knowing yet what I would make with it if anything. The girls wanted a mango smoothie and the mango we had wasn’t ripe so I decided to whip up a papaya smoothie.
Papaya Coconut Chia Smoothie
Makes 1 serving
1 c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1 c papaya chunks (used 1/4 of a fresh papaya, 4.2 ounces of chunks)
2 TBSP chia gel (chia gel is made by mixing 2 TBSP chia seeds with 6 oz of water and letting sit to thicken, at least 10 minutes, use only 2 tablespoons of prepared gel)
1-2 finely shredded unsweetened coconut
1 scoop natural or tropical protein powder, optional (used Vega Protein Smoothie, Tropical this time)
1 c ice
In a Vitamix, or high-speed blender, blend together coconut milk, papaya, chia gel, coconut, and protein powder if using until smooth. Add ice and blend smooth. Enjoy!

Sam’s Club carries frozen papaya chunks. I’m looking forward to whipping this up for breakfast tomorrow, yum!

Good to know! I don’t have a Sam’s Club anymore but I did have frozen papaya chunks before and couldn’t remember where I got them maybe that is where it was. I will have to go with a my mom, she still has a membership, and pick them up. I hope you enjoy it, cheers!
