Time to thin out the beets in the garden which means I have baby beet greens for cooking and to add to smoothies! I decided to saute some of the beet greens and toss them in a pasta for a quick dinner.
Pasta With Baby Beet Greens and Tomatoes
Makes 4 servings
6-8oz pasta of choice, can be gluten free
2TBSP extra virgin olive oil
few big handfuls of baby beet greens
2 cloves of garlic
8-10 Campari tomatoes, quartered or approximately 3 cups of quartered tomatoes
4-6 basil leaves shredded
sea salt and fresh ground pepper to taste
Bring a large pot of water to a boil, depending on time it takes to cook the pasta, drop pasta. The greens will take about 6-8 minutes to make. In a large saute pan add olive oil and saute beet greens. Once beet greens are sautéed reduce heat and grate in garlic cloves and add tomatoes. Toss to mix mixture. Once pasta is done you can mix in the beet greens and tomatoes, it may turn your pasta a little pink, or you can plate your pasta and top with beet greens and tomato mixture. Season with salt and pepper and garnish with shredded basil. Enjoy!
