Today is National Peaches and Cream Day so I decided to whip some up for breakfast. I needed a little more than peaches and “cream” as I have a busy morning ahead of me so I put my ripe peaches and protein cream on top of some vanilla chia pudding. This would also make a delicious dessert with or without the chia pudding.
Peaches & Protein Cream
Makes 1 serving
3TBSP chia seeds
1 ripe peach, sliced or chopped
1 1/3 almond milk, or non dairy milk of choice, divided (used So Delicious Unsweetened Almond Milk Plus Protein)
1tsp pure vanilla
1 scoop vanilla protein powder (used Vega One French Vanilla Nutritional Shake)
dash of cinnamon (optional)
To make the vanilla chia pudding mix chia seeds, vanilla, and 2/3 cup of milk and place in the refrigerator overnight or at least 20 minutes, the longer it sits the thicker it will get, the milk should all be soaked up in 20 minutes. Place chia pudding in the bottom of a tall glass, or bowl, and layer with peaches. Mix protein powder, Vega One, with remaining 2/3 cup of milk and pour over top of the peaches. Sprinkle with a dash of cinnamon if you wish and enjoy!
Alternatively you can just make the vanilla protein cream and pour over sliced or diced peaches!
