It might not be the prettiest but the taste more than makes up for it! I just got done making some Pumpkin Pie Applesauce and had another batch going and I couldn’t wait for it to finish so I took a wedge of a pumpkin I had just roasted and topped it with the batch of apple sauce I made that just finished up before I started the pumpkin spice apple sauce. Since I have a slight love for peanut butter I also had to top it with some peanut butter! It was a delicious combination that I had to repeat using maple peanut butter and pumpkin peanut butter. This can easily be made without having homemade apple sauce just saute up some apples with a little coconut oil spray or coconut oil and add a little cinnamon and coconut palm sugar or maple syrup. All the flavors of fall I like these for a breakfast and it has me full and going all morning long.
Peanut Butter Apple Pumpkin Boat
Makes 1 serving
1/4 roasted pumpkin, cooled or warm
1/2- 1c applesauce or 1 apple, 1 tsp cinnamon, 1-2 tsp coconut palm sugar/maple syrup, and 1 tsp coconut oil or coconut oil spray
2 TBSP peanut butter (used Peanut Butter & Co Mighty Maple for one and JIF Pumpkin Peanut Butter for the other)
If you aren’t using apple sauce spray a pan with coconut oil spray or heat up coconut oil. Chop an apple into small pieces and sauté apple until tender. Stir in coconut palm sugar and cinnamon and set aside to cool unless you are enjoying it warm. Plate pumpkin wedge (warm or cold), top with cooked apples or apple sauce (warm or cold), and top with peanut butter. Enjoy!

Thank you! I thought it looks delicious but really isn’t pretty and eye appealing but the taste makes up for it! The flavor combination is a go to this fall for me with the apples and pumpkin together and I seem to be eating a lot of both with peanut butter so it seemed like the perfect fall trifecta!
