Sweet and salty is one of my weaknesses, peanut butter and pretzels is the perfect classic combo that satisfies the craving! These Peanut Butter Pretzel Snack Bites have the amazing salty sweet combo of pretzels and peanut butter as well as some healthy superfoods sprinkled in!
Changing things up a little bit this week because it’s not another average every day week. Things are busy, fun, and a little crazy and there’s so much fun coming up in the next month so things might be a little off schedule but we’ll just go with the flow. To fuel this fun we need some good snacks, healthy eats, and lots of coffee! If you happened to miss it A Whisk and Two Wands turned 4 yesterday! Some days I can’t believe it’s been that long and some days it seems like it’s been so much longer! I’ve been celebrating all week with giveaways over on my Instagram, it’s not too late to enter, and since today is some of our favorite snacks I had to share this family favorite that includes one of them! Today’s giveaway is for Quinn Snacks pretzels and popcorn! Popcorn is another weakness and a snack staple in our house. One lucky winner will win delicious pretzels (gluten free) like the ones I used to make these bites and some yummy popcorn!
Now to these delicious Peanut Butter Pretzel Snack Bites or as I like to call them Birdseed Balls! Haha! I thought they reminded me of balls of birdseed and it was a cute name but the girls told me nobody wants to eat Birdseed Balls. Ok fine I guess we will call them what they are. They are packed with oats, ground pretzel sticks, and healthy chia seeds! A mixture of protein rich peanut butter, honey or maple syrup, and healthy coconut oil hold all that goodness together. We also like to sneak in some mini chocolate chips (chopped) but those are optional if you want to leave them out. Sometimes we also omit the chocolate chips and add in a couple tablespoons of cacao powder. I think the superfood chia seeds are why I think they reminded me of birdseed as I like keeping them whole in this recipe. Funny thing is the chia loving princess in the house S wasn’t a fan of the whole chia seeds in them at first and her sister A who isn’t a lover of chia seeds loved them whole. Crazy girls always keeping me on my toes. Chia Seeds are loaded with omega fats, protein, antioxidants and fiber. They are a great source of healthy essential fatty acids, eight times more than salmon! They’re also one of the most digestible plant proteins. Coconut oil is a healthy fat, and probably my favorite although avocado is right up there. These snack bites are filling and great when you just need a little snack in the afternoon or while running around. Lately though I’ve been grabbing about 4 a day with all the running around instead of other snacks. These and Brazil nuts have been my go-tos lately, especially in the afternoon. The girls love them for an at school or afterschool snack, after gymnastics/soccer, or anytime they grab one as we don’t have “rules” when it comes to food because I feel they need to be free to make their own decisions (with guidance) which 90% of the time means they make a good choice.
To another reason things are a little off schedule and why I’m posting on Thursday instead of my usual Friday….. tomorrow is busy as I’m going to hit 50 classes at Pure Barre and will be the 3rd person to make the Founding 50 Club! Even if we get a crazy snowstorm like they are saying I will make it to the class. I told my husband he would have to stay home and drive me if it’s that bad. LOL! With that I decided to shuffle the giveaways around and tomorrow will be for shh… my fav Go Macro Bars! Yes since they are one of my favorite pre barre eats, especially on busy mornings as I go right after getting the girls to school it was fitting. I’m also going to celebrate with my fellow barre babes and bring in Go Macro Bars to share! If that isn’t a perfect end to an already great week I don’t know what is! Oh and I’m already busy and getting excited for Expo (only the leading trade show in the natural, organic and healthy products industry, attracting over 77,000 industry professionals and 3,000 exhibits) that’s only 2 weeks away! From there I’ll be heading up the coast to Napa to celebrate being married to the most wonderful man for 15 years. So much excitement but don’t worry I’ll still be posting.

Peanut Butter Pretzel Snack Bites
Makes 12- 15 balls
1c rolled oats, gluten free if desired
50 pretzel sticks (Quinn Classic Sea Salt Pretzel, gluten free and organic)
3 TBSP chia seeds or chia powder (Navitas Naturals)
1/3c peanut butter (Peanut Butter & Co Smooth Operator)
2 TBSP coconut oil, melted
2 TBSP honey or maple syrup
2 TBSP mini chocolate chips, optional (Enjoy Life Mini Chocolate Chips)*
*Or you can also add in cacao powder (Navitas Naturals) if desired.
In a food processor pulse oats, pretzel sticks, and chia seeds to a medium to course texture. Add mini chocolate chips and pulse until they are blended, chopped, and you don’t see piece of chocolate chips. In a bowl mix peanut butter, coconut oil, and honey/maple syrup until smooth. Pour the peanut butter mixture into the dry mixture and blend until the mixture comes together, stopping to scrap down the sides as needed. The mixture shouldn’t be try or wet but able to be pressed and rolled into balls. Press mixture together and roll into balls, I make 12- 15. Place in the refrigerator to set, about 30 minutes, or until ready to eat. Enjoy!
