Nothing screams summer like s’mores! My favorite are ones made with a peanut butter cup instead of chocolate bars, Peanut Butter Cup S’mores! They are my inspiration behind these popsicles. Rich chocolate peanut butter popsicles with a creamy fudge pop like texture with marshmallows and graham crackers in them! They are so good and hit the spot, as satisfying as a peanut butter cup s’more but without having to light a fire and so refreshing on a hot summer day. I also made another version that I didn’t submit but it layers a creamy graham cracker layer, fudgy chocolate peanut butter layer, creamy peanut butter, and dipped in Marshmallow Fluff and sprinkled with graham cracker pieces! The girls, and my husband, like these popsicle so much I haven been trying to make other popsicles and they keep requesting these ones! So good they are gone before they even have a chance to melt!
Peanut Butter S’more Popsicles
Makes 6 popsicles
1c Peanut Butter & Co Dark Chocolate Dreams Peanut Butter
1c plain or chocolate milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk and So Delicious Chocolate Coconut Milk for the others)
1/2-2/3c mini marshmallows (used Dandies Mini Marshmallows)
2 full sheets of graham crackers (used my Camp Crackers, gluten free vegan graham crackers)
Break graham cracker into small pieces. Blend or mix the peanut butter and milk together until smooth, we used a Vitamix to blend ours. Fill popsicle molds alternating adding 1-2 tablespoons of chocolate peanut butter mixture, 1-3 marshmallows, and a few graham cracker piece (you can also use the crumbs) until popsicle molds are filled to designated area on your molds. Place stick into molds and freeze per popsicle mold instructions, we made these in our classic Zoku molds and froze them 8 hours or overnight. Enjoy!

Peanut Butter S’more Popsicles, layered version with Marshmallow Fluff
Makes 6 popsicles
1/4c Peanut Butter & Co Smooth Operator
1/2c Peanut Butter & Co Dark Chocolate Dreams Peanut Butter
1 3/4c milk, divided (used So Delicious Unsweetened Vanilla Coconut Milk)
8 sheets of graham crackers, plus 2 sheets broken for sprinkling on top (used my Camp Crackers, vegan gluten free graham crackers)
1c Marshmallow Fluff
In a Vitamix or blender, blend together graham crackers and 1 cup of milk and place in a glass or Zoku pour cup. Rinse blender, or you can just use it as is, blend together or you can stir in a cup plain peanut butter and 1/4 of a cup of milk until smooth. Place in a glass or Zoku pour cup. Again rinse the blender if desired and blend, or stir, chocolate peanut butter and remaining 1/2 cup of milk. Layer graham cracker mixture, chocolate peanut butter mixture, peanut butter mixture, chocolate peanut butter mixture, and than graham cracker mixture again. Freeze per your popsicles instructions. Remove from the freezer when ready to enjoy and dip, or spread top with Marshmallow Fluff and sprinkle with crumbled graham crackers. Enjoy!
