Quick and easy cookies! Yes I really said that even though many friends and family will laugh as they aren’t my usual M.O. this time of year. Usually I make sugar cookie cut outs with elaborate icing decorations. I make some with the girls but then also have a day where they get to spend time with daddy and I spend the whole day decorating my sugar cookies, they are my favorite and find the hours of carefully and elaborately decorating them relaxing. Crazy I know and I could use this day more than every this year but not sure I will be able to fit it in…. maybe New Years cookies? Could be a thing, right? The girls always like Peanut Butter Blossom Cookies my mom makes so I thought I would make a quick and easy version with Wild Friends Sugar Cookie Peanut Butter because then they would count as sugar cookies too… yeah I know I might be pushing it with that one. There might not be the usual cookies this year but there will be cookies! Peace, Joy, and Cookies!
Peanut Butter Sugar Kiss Cookies
Makes 2 dozen cookies
2c Wild Friends Sugar Cookie Peanut Butter
1 1/4c coconut palm sugar
2 eggs
2 tsp vanilla
24 chocolate kisses
Preheat oven to 350F. Line a baking sheets with silpat mat or parchment paper. Mix peanut butter, sugar, eggs, and vanilla together until combine. Using a tablespoon roll rounded spoonfuls of dough into a ball and flatten onto prepared sheet about 2″ apart. Bake for approximately 10 minutes until the bottoms start to brown. They may look a little underdone but will set. Let cool on the baking sheet for 2 minutes and press a chocolate kiss into each cookie. Place on a wire rack to cool completely. Enjoy!
